Your revelation about this scripture is a big one as it tends to open up Interpretations of Jesus in many ways.
The bible is a narrowed view, a view put together to form the bible and published as such.
The publishers had a huge agenda ahead of them and it was not truth.
Jesus came many times in many lands and times and each saw him as different, other than "Jesus" "son of God".
Jesus was the messenger of Truth, he represented such Truth and was not the "only" son of God nor did he "die" for sins" and nor is it truthful that one must believe in Christianities versions of his visitation to go to "heaven" which is another distrotion of truth.
I for one am moderately suprised the Church did not delete John 21:25 as it clues readers in to a broader road looking beyond Christianity for Truth.

A book the size of the Bible could never contain all of the things I ever did either.
John, in chapter 20, verses 30 & 31 says, "Jesus did many other miraculous signs in the presence of His disciples, which are not recorded in this book, but these are written that you may believe that Jesus is the Christ, the Son of God, and that by believing you may have life in His name."
Yes, more could have been written, but what we have is enough. God gave us all we need to "believe" and there is no need of additional writings. In fact, this seems to indicate that if it takes additional writings to convince us to believe, we do not have "life in His name" the way we do if we simply accept what has already been written.

The Bible was written as Jesus' last will and testament. Everything that is in it is what Jesus wanted us to know. There was probably a lot of things that happened that weren't included, but we are to live by what is written.

it means that the things Christ has done cannot be contained in one book.
But then the Bible never claims that the works or words of Christ are contained in a book. That is why Christ has revealed the Book of Mormon to stand as a second witness to His divine ministry.

Check out the Gnostic gospels (one written by Mary Magdalene herself) that the Church censored many centuries ago because they brought Christ's "divinity" into question.

It means that Jesus did so many things........that if they listed them...........there would be an innumerable amount of books. God has done so much that we don't know about or don't comprehend. It's not possible to fit all of it in one Book.

or perhaps it's a reminder that we are here to walk by faith, not sight -- and shouldn't be governed in all things --
[plus, the old testament is about God's dealings with a particular family/nation & their geneology... the new testament is the testimonies & teachings of the early apostles/disciples -- won't it be nice when we have scripture [meaning book inspired by God & written by the prophets] detailing the Savior's dealings with his 'other sheep'?...

this i find rather difficult to believe
Jesus only ministered a few years before his death
and he was in human form
surely even if every moment of his life was written about ... books could contain that
