Cut any mold off and then you can cut it up or shred it; either by hand or with a small food processor. Parmesan and Romano are 'hard' cheeses because they have very low moisture. This does not mean they are bad, in fact, the harder, the stronger the flavor. Enjoy!

As long as it's not moldy, shred it for salads or put on top of spaghetti. I use romano in a baked pasta dish that my family loves. Do a quick search for that type of cheese on a recipe website to help you with a recipe.

if it's not to hard to grate it , do it. Otherwise chop it in pieces and put them in a risotto or a soup while they are cooking. They will get soft and they are the best! In Italy we usually grate our parmiggiano and use the crosts (that are too hard to grate) in risotti and soups.
