im making some sandwiches tonight and i want some ideas with what to fill them. i prefer healthy stuff though. any ideas? the more the better. thankx in advance!

******HAMBURGER STUFFED FRENCH BREAD
1 loaf French bread
1 onion, chopped
3 cloves garlic, minced
1 lb ground beef, browned w/onion and garlic
1 can condensed cream of mushroom soup
salt and pepper to taste
1 1/2 cups shredded cheese (any type)
1/4 cup fresh parsley, chopped (optional)
In a skillet, sauté hamburger with minced garlic, chopped onion and (optional) parsley.
Preheat oven to 350°F.
Carve top in a circle (leaving a "cap" that you will replace on top later) out of French bread and hollow out the middle. Break up the bread innards into small pieces and set aside in a medium bowl.
To these bread crumbs, add the browned hamburger mixture, condensed cream of mushroom soup, and seasonings to taste.
Mix ingredients well and restuff this mixture back into French bread shell.
Top with cheese and replace the top (hopefully you saved it).
Wrap in aluminum foil and bake in 350°F oven 20 minutes. This will melt the cheese and help the flavors to combine. Slice and serve. Individually wrapped slices freeze well and make a quick and yummy take-to-work lunch.

*********OPEN-FACED BACON SANDWICHES
6 slices bacon
2 French rolls
Thousand Island salad dressing
Slices of lettuce
Slices of tomato
Shredded Cheddar cheese
Cook bacon and drain on paper towels. On 1/2 of a French roll, spread dressing, then add lettuce, tomato, bacon (3 slices per sandwich) and shredded cheese on top. Broil 2-3 minutes until cheese is melted. Serve immediately. Serves 2.

*********MEATBALL SANDWICHES
SAUCE:
1/4 c. onions, chopped, or to taste
1 tsp. crushed, bottled garlic OR 2 cloves garlic, minced
1 tbsp. olive oil
1 lb. canned tomatoes, broken up
1 lb. tomato sauce
2 tsp. parsley
2-2 1/2 tsp. salt, or to taste
1 1/2 tsp. oregano
1 tsp. basil
1 lb. ground beef
MEATBALLS:
4 slices bread, whole wheat OR white
1 lb. ground beef
2 eggs
1/2 c. Romano cheese, grated
1 tsp. salt
2 tbsp. parsley, chopped
1/2 tsp. crushed, bottled garlic OR 1 minced clove garlic
1 tsp. oregano, crushed
Dash of pepper
Or preferred frozen meat balls
4 submarine sandwich buns OR sm. loaves French or Italian bread
2 pkg. (4 oz. ea.) Mozzarella cheese
To make sauce, cook and stir onion and garlic in olive oil until tender. Stir in tomatoes, tomato sauce, parsley, salt, oregano and basil. Heat to boiling, stirring occasionally, reduce heat and simmer, uncovered 1-1 1/2 hours. when sauce is almost finished simmering, brown ground beef in separate skillet, drain off fat, and stir into sauce. Simmer another 20 minutes.
For meatballs, soak bread in water 3 minutes, then squeeze dry and add the ground beef, eggs, Romano cheese, salt, parsley, garlic, oregano and pepper. Form into 16 meatballs. Bake at 350 degrees for 30 minutes, or until done.
To assemble sandwiches, put 4 meatballs in each of the buns or loaves, add sauce, then cheese on top, dividing ingredients evenly. (Don't use too much sauce or sandwiches will be soggy.) Wrap each sandwich in foil and bake at 350 degrees until cheese melts.

Well if you want to stay healthy I suggest, low fat or low sodium sandwich/deli meats. Some nice smoke turkey or ham would be nice with Swiss cheese or provolone. Baby lettuce or nice slicing tomatoes and Dijon mustard or low fat mayo on Wheat bread.
You can also get some Tuna (in water) and lighten that up with low-fat dressing (mayo) and sweet pickles.

One thing my family really enjoys is roasted turkey, sprouts, cuke, roasted red pepper, a slice of munster and the bread spread with hummus. It's really good.

Another we really like is a toasted rueben. We put rye bread on a cookie sheet and put a half slice of swiss on each side. We put a few slices of corned beef in the mic and top with sour kraut. Squeeze a little bit of mustard on the cheese once it's melted and add the meat and kraut. It's good and you take the calories out from the butter.

Another is a thin slice of chicken that you have marinated in no fat Italian dressing. One breast pounded thinly will make two sandwiches. Let this marinate for about 1 hour. Then grill or broil for about 4 minutes per side. Top with fresh arugula and sliced tomatoes. Sprinkle on a little bit of balsamic vinegar.

My daughter loves a salad pita. Dice up cukes, peppers, & onioins. Mix this with shredded carrots and lettuce. Toss with any type of dressing you like. I prefer greek dressing and tossing a little feta in, but she likes hers with no cheese and Italian dressing. If she's not home I add some diced hot peppers and olives into it as well.

Another one I make is a fake full fat mixed sub. I get turkey pepperoni and ham. In a blender I mix up 1/2 a jar of those spicy cured vegetables and one small can of sliced olives. Put this in the food processor and let zip up with about 1 tbsp. of olive oil. Spread this on each side of the bread. Then add the meat, provalone cheese, lettuce tomatoes and onions. Wrap it tightly in saran wrap and let it marinate on the counter for about an hour. It's really good.

try spreading some green italian PESTO sauce( e.g. Barilla*) on the bread. It goes with Regato cheese (Or smoked Regato-even better!) Pesto sauce is really healthy and very VERY aromatic, so you won't be needing anything else for your sandwich. It's delicious, give it a try :-)

For lunch today, I packed scallion hummus, smoked turkey and a slice of provolone on 12 grain bread...now that I think of it, I should have added some veggies like baby spinach and red onion for flavor and color.

Apple and cheese. (Russets and Cheshire - Cox and goats, try grilling the filling first, yummy.)
Chicken. Tuna.
Anything with salad.
I love bacon, yoghurt and mayo spiced with garam masala. Add some lettuce and cucumber.

ooh so many choices-
cooked turkey in a curry marinade (yoghurt, curry spices, paprika, tomato paste, raisins) on a bed of greens with some sliced onion

roast beef with roasted tomatoes and caramelized onions

sliced avocado, tomato, olive tapenade, havarti cheese and some baby spinach

Think deli stuff, variety of meats, variety of cheeses and lots of veggie toppings. This is always a good way for your family to make them the way they like. Less work for you!
