The folks at Sargento Reserve say you can freeze ricotta cheese, although the texture will suffer. You can certainly freeze it for six months. Thaw it in the refrigerator for a day or so. When thawed, there may be some liquid on top, which you should stir back into the cheese.

No.. sorry. That's one of those cheeses, before it's cooked, that you can't freeze. Taste quality and consistency will suffer. I've misjudged how much I'd need many times over the years. Sometimes I've made another recipe... other times I've had to throw the rocotta out.

you can freeze why not but you will lose it freshness most of cheeses are chilled not frozen specially ricotta and cottage cheese some block cheeses can be frozen without suffer the quality like muenster cheese mozzarella and its kind .
