Yes.

You use a smallish pumpkin--not one of those giant suckers you make a jack o' lantern out of. Split it in half and clean the seeds and gunk out of it.

Lay it face down in a baking sheet and roast it at 350 degrees for about an hour. When it is all soft and cooked, you remove it and let it cool. Cut the pumpkin into smallish chunks, (skin and all...) and mash it into a smooth paste. Add you spices, sugar, and other ingredients just as usual.

The trick(s) are to leave the skin on--otherwise the color is not the beautiful brown color--more of a tan. Also make sure the pulp is well blended--you don't want to bite into any pumpkin chunks.

Make a couple of practice pies before you make it more a big event like thanksgiving.

Soitenly! Why not? You cut the pumpkin in half and scoop out the seeds - save them. Place the pumpkin halves cut side down on a cookie sheet and bake 'em in the oven at 350 degrees for an hour. Remove them and let them cool, then scrape the soft flesh from the hard rind, and proceed to make your pie with that as if it came right from a can.

Take those pumpkin seeds you saved and put them on the cookie sheet, and put it back in the oven at 350 degrees for 15 - 20 minutes. Take 'em out and immediately sprinkle a little salt on 'em - makes a terriffic snack!

Sorry, but you gotta throw out the hard pumpkin shell - only the seeds and the softer flesh of the punpkin are edible.

well of course you can....all you do is bake it for about an hour then the insides will be soft enough to scoop out and mash..or puree if you have a food processor or blender...the best pumpkins for this are the smaller ones...not teeny tiny ones but about half the size of a basket ball... After you get the pumpkin soft..add a can of evaporated milk 1/2 cup whole milk and sugar and cinnamon, nutmeg, ginger or just a few teaspoons of allspice...and white sugar...then add 3 slightly beaten eggs and a bit of vanilla....But Honestly the Canned pumpkin is easier and not that expensive....But either way works...the can is just easier and it is real pumpkin also...I use libbys but have also used store brands...OH and when your done Send me a slice ....HA

yes. You must cut it up and cook it and then "mush" it into pumpkin pie filling. You can google "Pumpkin Pie filling recipes" to get a recipe that you like. I've made pies from scratch like this and they taste so much better than the canned filling.
