Vijaya Dashami is very auspicious to do Akshrabyasam.
Generally Navami is devoted to the chant of Lord, and nothing New is generally started on that day. Saraswathi Pooja dos not fall on Moola Nakshatram. If you r going to start something related to studiying which should be done immediately, and Vijaya Dashami is not nearby, U can start on Moola Nakshtra day.
But AksharaByasam should be performed only on Vijaya Dashami. Vijaya Dashami stands for Victory, and it is the day when all the 3 important Shakthis (Iccha, Kriya and Jnyana Shakthi) Combine.
But If U r a Bengali, Vasantha Panchami is preffered for Aksharabyasam. Punjabis do it on some other day. All Others, Vijaya Dashami or Dussera - However they call it, is the best.

Yes- Durgashtami is good day for Aksharabyasam - Currently we are celebrating Devi Navarathrulu - Means a collective pooja will be performed in all goddess temples for 9 days to all goddessess - My personal advice is Visit Basar Temple- Adilabad District- Andhra Pradesh - India.

You can start Akshara-abhyasam for small children on the Vijayadasami Day. It is very all auspicious for all purposes. Moola nakshatra day is not required for beginning learning -
