I boil them for 15-20 minutes, drain and immediately put them in icy cold water where I leave them until they cool. Then when I peel them, I crack both ends, and then set them on a bread board and roll them using the palm of my hand, the shells will crack and starting at the fat end of the egg I peel them and I get perfect eggs every time.

If you want a perfectly hard boiled egg go this route everytime...
Place eggs in a saucepan with enough cold tap water to cover completely by 1 inch. Bring to a rolling boil over high heat. Once the water is brought to a rolling boil, promptly reduce heat to a lower medium boil and cook an additional 10 minutes for a “hard boiled” egg. For a “soft boiled” egg reduce the time by a few minutes.
Remove from heat and immediately place eggs under ice cold water or in a bowl of iced water to chill promptly to help yolks stay bright yellow. Chill for a few minutes in the cold water until the egg is completely cooled. This is an extremely important step which prevents the greenish “ring” from forming on the surface of the yolk over time. If the egg is not chilled immediately after cooking an unsightly dark greenish ring will eventually appear on the outside of the yolk.
To peel, crack the shell around the entire egg and remove.

It sounds like you burned the, 30 minutes is way too long to cook eggs.
The proper way to boil eggs - put the eggs in cold water and turn on the stove. Let them come to a boil, remove from heat, cover and let set for 12 minutes.
You will have a perfect hard-boiled egg.

Thirty minutes is a long time to boil an egg.
Try boiling them for a few minutes, then turn off heat. Leave in the hot water for 15-20 minutes. When you want to peel them, put them in cool water for a few minutes.

30 minutes is way too long. My recommendation; bring water to the boil in a pot, add some salt to the water. When the water is boiling properly, add the eggs to the water.
For hard eggs, boil between 12-15 minutes
For medium eggs, 8-11 minutes
For soft eggs, 5-8 minutes

To make the perfect hard boiled egg EVERY TIME:
Start with a pot of eggs (the older the egg, the better it will be to peel). Cover with cold water, also salt the water slightly.. Place pot on high heat and bring water to a rolling boil. Then, cover the pot and remove from the heat for 23 minutes. After 23 minutes, rinse the eggs with cold water, and refrigerate. Peel at your leisure.

the main thing to remember about hard boiled eggs is that you need to put them under cold water as soon as you take them off the heat to stop that blac ring forming around the yolk.
i boil mine for 6 or 7 minutes then cold water
you can boil them for less and get a hard-boiled egg with a slightly soft centre

Yes, they can burn. For normal hard boiled eggs, you want to let them boil for about 20 mins.
