Bruce Lee was more a martial artist than Jet Li and Jackie Chan combined... though whoever got to the machine gun first would probably win.

well for that you'd have to revive Bruce lee from the dead. Turn Jackie chan's biological clock back some 20-30 years and for safety take Jet back another 10 too. Once you've finished doing all that get busy on renting an arena and foreseeing a thousand weapons and get the three willing to fight one another for the fun of it.
no one will ever know the outcome of something like this as it has and will never happen.

If by weapons you mean traditional chinese kung fu weapons like sword, staff, spear, etc. Then Jet Li would have the advantage over Bruce and Jackie since he has had extensive training with weapons since childhood. I remember in a documentary about Jet Li when he was still 17 and newly crowned All China Wu Shu Champion, where it was stated that he had trained in all the 18 traditional weapons of the Shaolin style from the spear to the rope dart. Jackie would come a close second since he does incorporate weapons in his stunts and have a familiarity with most of them due to his Beijing Opera school training background. Bruce would be the most disadvantaged as he didn't really focus much training with weapons and he admitted himself that the nunchucks he is famous for in his movies were just good for show and theatrics to dazzle the audiences. He preferred to fight with his fists. Although he is not adverse to using a gun, according to Dan Inosanto, he once owned a fast drawing cowboy gunbelt rig that used to belong to a western movie star, not sure which, but it may have been Yul Brynner, Steve Mcqueen's co star in The Magnificent Seven, since McQueen was a good friend of Bruce's.
