TOMATO-CHICKEN PASTA
Ingredients
1 (9-ounce) package fresh fettuccine
1/4 cup boiling water
2 tablespoons sun-dried tomato sprinkles
2 teaspoons olive oil
Cooking spray
1/2 cup finely chopped shallots
1 pound chicken breast tenders, cut into 1-inch pieces
1/2 cup dry white wine
1/3 cup whipping cream
1/2 cup chopped fresh basil, divided
1/4 cup (1 ounce) preshredded fresh Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation
Cook pasta according to package directions, omitting salt and fat.
While pasta cooks, combine water and tomato sprinkles in a small bowl; let stand 5 minutes. Drain.
While tomato soaks, heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add shallots and chicken, and saute 5 minutes. Reduce heat to medium; stir in wine and cream. Cook 3 minutes, stirring occasionally.
Combine the pasta, tomato, chicken mixture, 1/4 cup basil, cheese, and salt, tossing well to coat. Sprinkle with 1/4 cup basil and pepper.
Yield
4 servings (serving size: 1 1/2 cups)

Pasta Bake!
chicken breasts - cut into small pieces
jar of tomato sauce
any short pasta
fresh herbs such as parsley, basil, oregano
mozzerella
onion
garlic
Preheat oven to 250 C (i think 470 F? - hot anyways)
Brown chicken in pan and saute onion till soft. Meanwhile boil pasta until al dente.
Mix pasta, chicken, onion, herbs, garlic, 1/2 cheese into an oven proof baking dish. Top with rest of cheese and more herbs! Put in the oven for 15 mins, or until cheese has melted!

Put olive oil and about 4 chopped tomatoes or use a large tin of chopped tomatoes in a saucepan. Add 1 large onion, chopped. Add garlic, lemon juice and the chicken. Braise for a few minutes.
Then add fresh basil, coriander and origanum. Add salt and freshly ground black pepper.
When the chicken is cooked through, you're meal's done. While the chicken is cooking, put your pasta on and cook it al dente.

Chicken Parmesan over Linguini:
4 boneless skinless chicken breasts
1/2 cup Italian bread crumbs
1 egg mixed with 1/2 cup milk
Salt, pepper, garlic powder
1 jar Paul Newmans' Sockarooni Pasta sauce
1 package shredded Italian cheese
1/2 cup grated parmesan
1 box linguini
Season chicken breasts and dip in egg mixture. Roll in bread crumbs and saute in hot skillet in olive oil. When golden brown, place in baking dish and top with spaghetti sauce. Sprinkle with shredded cheese and grated parmesan. Bake at 350 degrees for 30 minutes, or until cooked thru. Make pasta according to package directions and drain. Top with chicken breasts and remaining sauce.

Chicken cacciatorre would be my choice. you can serve it over rice or gnocchi as well as pasta.
