I use plastic. I was taught that wooden cutting boards tend to harbor bacteria. I don't think that much about cutting boards, though, so if bamboo is important to you in a cutting board, I say go for it. Just make sure you wash it with hot, soapy water after each use.

They make a good tight bond - which inhibits bacterial growth. And they come from a renewable resource. Bamboo grows a lot faster than trees and is a much more ecofriendly substance than plastic.

Because bamboo is very hard and will not allow much to permiate into like maple.
