She did but we laughed at her the way she was acting one time and acted embarrassed and went to hide. Now she leaves the room whenever we put it out for her. Do cats know when we're laughing at them? Will she ever like it again?

If you put it out for her too often, she may have built up a tolerance for it. They are smart enough to make the connection between making a fool of herself and you laughing at her, especially if you only did it when she was in Kitty Catnip Raptures.

My oldest cat, Bacon, is a year old, and he has NEVER been impressed with catnip. I tried growing some fresh, and the dried stuff, even the liquid catnip. He just doesn't care about it. Maybe the other two kittens will get a kick out of it when they're a little older. My vet told me they can't even smell catnip till they are over 6 months old. I guess Bacon wants to remain drug-free. Good kitty!

Catnip is a drug to them. Perhaps she gained tolerance to it and it doesn't affect her so much anymore.

Cats do have a sense of dignity - when my cat does something stupid, like runs too fast and hits a wall, or falls off something, he'll pretend no one is watching, lick himself, and walk away. But I don't think cats can make the connection between something like you laughing at her, and the catnip.

Yes, they do. Leave her alone and she may want some later. If not, no big deal. If her dignity is more important to her, that's her choice.
