anyone have any good eggsalad recipies

Ingredients

- 4 eggs
- 4 tablespoons mayonnaise
- 2 teaspoons sweet pickle relish
- 2 tablespoons green onion, finely chopped
salt to taste
freshly ground pepper to taste

Directions

~ Fill a small sauce pan with enough water to just cover eggs and bring to a full boil. Reduce heat to low and cover. Cook eggs for about 10 minutes.
~ Remove from heat, drain, and immediately cool eggs with cold running water.
~ Peel eggs and finely chop. Add mayonnaise, pickle relish, chopped onion, salt, and pepper and mix.
~ Spread on bread of your choice. Garnish with lettuce or sprouts (optional).

Servings: 4
Prep Time: 15 minutes
Cook Time: 15 minutes

Traditional Egg Salad Recipe

7 hard boiled large eggs
1/2 cup diced celery
1/2 cup diced sweet pickle
3 Tbs. mayonnaise
1/4 tsp. ground pepper
1/2 tsp. salt
PREPARATION:
Slice eggs in half and take out 3 yolks, put them aside. In a medium bowl chop the rest of the eggs into small pieces. Add celery, sweet pickles, salt and pepper. In a small bowl, take the 3 yolks and mash them with a fork. Add mayonnaise and mix until creamy. Mix the dressing with the egg mixture. Serves: 4

I have a simple and easy egg salad recipe that is our families favorite:

6 hard boiled eggs peeled and chopped fine, i put mine in a food processor and it chops them really good...

1 tbsp miracle whip salad dressing

1-3 tsps dijon mustard u can use as little or as much as u want with this...

1-2tsp dried parsley

1-2 tsp fresh chives cut fine

1-3 tsps of pickle relish

salt and pepper to taste...

chop up eggs and add all the other ingredients making sure to add salt and pepper last and mix well together to your desired consistency and put in fridge for 1-4 hours and serve on your favorite bread, and i also add miracle whip to the bread before i put the egg salad on and it is delicious... ENJOY...

EGG SALAD: Combine in small bowl;
4 large eggs hard-cooked & chopped,
1/4 cup mayonnaise,
1 1/2 tbsp finely diced celery or onion,
1/2 tsp dried chives, 1/4 tsp onion powder,
1/4 tsp salt, pepper optional.
Makes 1 cup of filling.

Basic recipes is:
chopped hard boiled eggs
mayonnaise
salt
pepper

Serve between two slices of buttered bread with some lettuce leaves. Or in a pita pocket with sprouts.

But you can add one (or more) of the following for some variation:
bacon
green olives
black olives
ham
cherry tomatoes/grape tomatoes
caviar
dijon mustard
avacado
smoked salmon
chilled lightly cooked asparagus
shrimp
capers (thoroughly rinsed)
cheese (any grated or shredded you like)
herbs, esp tarragon or dill
hot sauce
shallot
substitute blue cheese dressing for mayo or part of mayo
substitute southwest ranch dressing for mayo or part of mayo

Boiled eggs about 15', soaked in cold water, peel and chop eggs. Salad, slice tomatoes. oil olives, chopped onion, salt, sugar, pepper, vinegar to taste and mix. Serve eggs salad on the tray, put chop eggs, sauce mayonnais on top mixture. ENJOY.

I like mine with mayo/salt/cracked pepper and nothing more because I like to taste the eggs, but my husband likes chopped up green olives in his.

EGG SALAD RECIPE



Ingredients:




6 eggs (fully boiled)
2 boiled Potatoes
1 Capsicum 1 onion (thinly sliced into rings)
1 Tomato (thinly sliced into rings)
2tsp lemon juice
salt to taste
Black pepper to taste
Finely Chopped coriander leaves


Preparation:
Cut eggs into halves.
Take out the yolk and mash with boiled potatoes.
Mix salt, pepper, lemon juice and chopped coriander.
Fill eggs whites with the mixture.
Serve the egg salad in a tray garnished with onion, tomatoes, chopped capsicum & coriander.

Farfel and Egg Salad

3/4 cup Matzo farfel
3/4 cup Hot chicken stock
4 large Hard-cooked eggs
2 tablespoons Seasoned olive oil
1/4 pound Fresh white mushrooms -- minced
1/2 cup Ea. minced onion &
Bell peppers
2 teaspoons Spice mix
1 medium Golden del. apple
Peeled; cored -- minced.
1 teaspoon Honey
2 tablespoons Corriander -- or dill or
of each.
1/4 teaspoon Salt
Freshly grnd. black pepper

Put farfel in sm. bowl. Add stock and stir. Let stand until completely cooled.
Place eggs in med. bowl and mash. Stir in softened farfel. Heat oil in nonstick skillet.
Add mushroom; onion and pepper. Sprinkle with spice mix and saute over med.
heat until mixture starts to soften (3 min.) Stir in half the apple; saute for 1 min.
Add to the bowl along with remaining apple. Drizzle honey over salad, then
combine with mixture. Add herbs, salt and pepper an combine.
Serve at room temp. Yield: 2 1/2 c.; 5 appetizer servings; 8 to 10 servings as spread.

Devilled Egg Salad

6 Eggs -- hard boiled
1/2 teaspoon Dry mustard
OR
2 tablespoons Prepared mustard
1/2 teaspoon Salt
Onion juice -- if liked
Pepper & paprika
1 tablespoon Chili sauce
Cream or salad dressing to
Moisten

Peel eggs and slice longways. Carefully remove yolks, so as not to tear whites.
Put yolks in a bowl and mash with fork, making a paste.
Mix remaining ingredients with yolks and blend till quite smooth.
Lightly pile yolks back into egg whites. Chill.
Serve on lettuce with mayonnaise or your favorite dressing. Deviled eggs go very well with salmon.
