First I would like to say that many things have been considered good or evil, long before Christianity came about. It has absolutely nothing to do with religion, but more with societies views on a particular matter. Good and evil can also change and are not laws written in stone. When something is considered good, it is because it affects the majority of society in a positive way and it is evil if it affects the majority of society in a negative way. There are many examples of this throughout history. For example, in biblical times it was not considered evil to own slaves. The bible even condones the act as long as you do not beat them to death. If someone were to traffic or own slaves today, it would be seen as the act of an intensely evil person.

"good" are things we like, make us feel good, and comfort us. "evil" are things we don't like, fear, don't understand, or make us feel less secure. But the Universe is more than just Black and White. Personally, I am trying to get beyond Dualism, beyond seeing the world in terms of Good and Evil. Life is far more complicated than that.

Evil is committing a sin with the intention of hurting another. For instance, Gossip is evil because it is a sin committed with the intention of slandering the name of another person. Sin is disobedience to God. Good is obedience to God.

religion sees good and evil as forces vying for supremacy of the universe or some such nonsense...to me, they are words signifying one end or the other of the spectrum of human opinion...

I always think of it as:
If you don't want it down to you, it's probably bad

So, if you go and kill someone, you are telling the world you are open to being killed. Lead by example, really.

Evil and Good are measured against one another.

Good is God and eternal. Evil is a seeming lack or absence of good, and temporal.
