Chicken a la King. That is the easiest thing to do. Just cook some frozen mixed vegetables in a can of cream of chicken (or cream of mushroom) soup, and add the chicken. Serve over rice. That is what I do with leftover Thanksgiving turkey.

Make a chicken pot pie

Buy or make a pie crust
Put the chicken, chicken gravy, any type of vegetables - the broc and cauli would go well, also why dont you use a bag of frozen veggies - add whatever seasoning you like - the gravy has enough salt, maybe some pepper and garlic, maybe sautee an onion - i dont use a recipe for this - I use whatever I have! Microwave the mixture just to make sure its really hot so it gets heated thoroughly. Pour it into the pie crust and add the top of pie crust, poke a design in the top and bake it at 350 deg fahren for 30 minutes or so.

Also, make a chicken calzone, use bread dough and fill it with chicken, cheese, veggies and maybe a little ranch dressing, and bake it on a cookie pan!

The easiest thing would be to make tacos or burritos.

I make a great chicken taco soup out of shredded/ cut up chicken that is easy to make. It really involves just dumping a bunch of cans of different things into the crockpot such as corn, pinto beans, black beans, mild green chilis, and diced tomatoes. Be sure to include the liquid from the cans as well as this is the base for the broth. I do not pour in the liquid from the black beans because it is so dark --- that's up to you. Then add a 12 oz. bottle of beer (Corona is what I opt for) and a package of dried taco seasoning that you find in the spice section. Toss in that chicken too. Let it cook all day. Wnen you serve it, top it with tortilla chips, cheese and sour cream. It's a real hit with a crowd.

Throw the shredded chicken into a crockpot, or just a pan on the stove. Add some onions and BBQ sauce and simmer. Slap it on some buns. BBQ chicken sandwiches. Yum!
