Hi! Normally Italian dressings do not exist.... In Italy we just dress the salad right when we eat it. We just add according to taste, oil, salt, vinegar or lemon or orange juice. Abroad they sell all of these dressings but it's just and invention for foreigners.... in any case you may keep the bottle in the fridge for some time especially if it contains real olive oil. the latter is indeed a good preservative.

If it's an oil based dressing like Italian, it will last longer (especially kept in a cool place), but if it's a creamy dressing or has any milk or mayo in it, I wouldn't risk it.
edit to clarify my answer: If you store it long-term out of the fridge, yes it will go bad. But it will go bad MUCH SLOWER than creamy dressings. So if you're storing it in a cupboard but finishing it within a month or so, I'm sure it's fine. If you take a long time to finish it, put it in the fridge.
Another thing to watch for is animal ingredients, like anchovies in caesar dressing, which will go bad faster.

My answer would be YES, why? Because after all are we not allowed to store things anyway we want? It's up to you if you would like to be sick or not.
Most creamy dressings should not be stored out of the fridge once opened. The Air that gets in will cause bacteria to fester. :) So, it's up to you. :)

they obviously have something in it that you may not relize that needs to be in the fridge so stay on the safe side. and do so. no need to get sick.
