Im making chicken soup and am boiling the carcass of a 4lb chicken that was already cooked (making soup out of whats left) and was just wondering how long should i cook it before taking everything out of the broth.

I put the bones,skin of the carcass in several quarts of water with a cut up large onion,several carrots cut in half and stalks of celery with leaves in a stock pot and bring to a boil. Then let simmer on very low heat for several hours.Skim off foam. Take off heat and remove all the large pieces. Strain the liquid twice through damped handi-wipes placed in a pasta drainer. That will remove all the grit cooked down from the bones. Put in the fridge overnight and the next day all the fat will be solid on the top. You can then remove the fat layer if you wish,but a lot of flavor is in the fat. The bottom layer will many times be a concentrated gelatin that you can divide up and freeze part for later use. It takes time,but makes a great base for soup,gravy.

Just until you see the meat come off of the bones...usually less than 30 minutes. Add your veggies after you remove the carcass and simmer until soft to your liking then put in the meat that you took out (if there is any). Today is a good day for soup in my neck of the woods. Sounds yummy!
