Rice Pudding
3 slightly beaten eggs
2 cups milk
1 1/2 cups cooked rice
1/2 c. sugar
1/2 cup raisins
1 tsp. vanilla
ground cinnamon
In bowl, combine eggs, milk, rice, sugar, raisins, vanilla and 1/2 t. salt. Mix well. Bake in 10x6x2" baking dish at 325 for 25 minutes. Stir. Sprinkle with cinnamon. Continue baking till knife inserted halfway between center and edge comes out clean, 20 to 25 minutes longer. Serve warm or chilled. Serves 6
VANILLA SAUCE:
1 cup butter
1 cup sugar
1 cup milk
2 teaspoons vanilla
Combine all ingredients in saucepan until heated through.

Vanilla rice pudding
Serves 2
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
85g/3oz caster sugar
570ml/1pint milk
1 vanilla pod, seeds only
200g/7oz basmati rice
110ml/4fl oz double cream
4 tbsp soft brown sugar
Method
1. Place the sugar, milk and vanilla seeds into a pan and bring to the boil.
2. Add the rice, reduce the heat and gently simmer for 8-10 minutes.
3. Add the cream and simmer for a further 4-5 minutes.
4. Transfer the rice pudding to serving bowls and sprinkle the brown sugar over.
5. Using a blow-torch, carefully glaze the rice pudding to golden.
6. Serve immediately.

This is a slow recipe, but oh so good. It's a creamier, less grainy version than some.
Preheat oven to 250 degrees
6 cups hot, but not scalded, milk (2% or homo for a real treat, but 1% is good too)
2/3cup arborio (short grain) rice
1/2 cup sugar
4 tbsp butter
2-3 tsp cinnamon (adjust to taste)
Mix together the above ingredients and pour into a greased casserole dish. Bake for 2 1/2 hours, stirring every 1/2 hour or so. If you like, add a 1/2 cup of raisins at 2 hours. When finished, stir in 2 tsp vanilla. Sprinkle with more vanilla, if desired.

hand full of rice
hand full of butter
hand full of sugar
1 pint of milk
180 degrees
45 mins
( i usually put it in the bottom of the oven when im cooking a roast, about the same time as the potatoes and leave it in until you need it :)

i wish i could help but i normally let my mum cook it so its always perfect
but you can buy the rice pudding packet and it will tell you how to make it on it.
