if you warm it . the heat helps to break down the oils which then release more flavor

If it's stick cinnamon and you're boiling it in liquid to infuse, scrape the pieces of bark to help release the oil and remove the "dead ' layer from the outside before you add it to the liquid.

Freshness is your friend. Time and heat and light are the enemy. If your ground cinnamon has no flavor, toss it and get new.
