I would like to start eating healthier and I am having trouble thinking of meals and snacks to replace junk foods like crisps and chocolate bars.
My weight is not an issue at all, I am actually trying to gain weight, so I need some moderate to high calorie foods.
I try to avoid any unhealthy foods like crisps, etc. but for example, right now I was starving for food and I looked in the kitchen to find barely anything that I can just grab and eat quickly. I did manage to find some salmon pate, which I made with wholegrain bread - but I can;t find anything else! I was tempted to grab a packet of crisps but managed to change my mind.
As for dinners, I do eat pretty healthy dinners but think I have too much meat like sausages, etc. and I don't usually eat more colourful veg like peppers, chilli's, etc. I also don't think I get enough fruit.
There are not many foods that I dislike, so please give me some healthy, moderate-high kcal recepices. I especially like noodles, pasta, etc.

Crisps, those must be like potato chips, Fritos, etc. True those aren't healthy, but with a sandwich in moderation they would be ok.
Yes more veggies, if you buy them bring them home and wash them and prepare them in small snack baggies, then store them. That makes it easy to grab because the work is done. Mix it up, like celery sticks, carrot sticks, some chunks of sweet green pepper, sweet red peppers, Jicama, raw sweet potatoes spears, these do have holding power for about 4 days cut and ready possibly longer but not much. You can also mix up a veggie dip and dip the veggies for a change or treat. Fruits are great anytime, these I wouln't cut up ahead of time, grab and eat. Yogurt is another great snack. I love Wheat Germ in my yogurt of any flavor. I add about 2 tbl and gently stir it in. You can also, keep a bag of pecans, walnuts, or ? on hand in the freezer and drop a few nuts in the yogurt for crunch. Keeping nuts frozen keeps them from becoming rancid. Canned chicken and tuna always keep on hand in the pantry this is nutritious and better for you than too many sausages. Either the chix,or tuna, over a green salad is really tasty for lunch or a snack between meals. One of my favorites is chicken or Tuna salad on crisp multigrain crackers topped with a square of sweet red or green pepper. Instead of eating a sandwich made with the tuna salad or chick salad it is a change on the crisp crackers.Faster than making a sandwich too. (Tuna or Chix, mayonaisse, green onions, celery, salt and pepper and a few raisins) If you prep the veggies ahead of time, meal making, or snack making is much faster. Good Luck

Well, since you are trying to gain weight, then try snacking on some nuts and dried fruit, or make a peanut butter sandwich on whole grain bread - perhaps with honey. Cheddar cheese with apple slices or wholegrain crackers. Turkey or ham sandwich with cheese, lettuce and tomato.
Pasta's not particularly nutritious, but you can make pasta alfredo with chopped veggies such as brocolli, garlic, and peas. You can also add shrimp or chunks of chicken.
Stir fried veggies with chicken, shrimp or beef over rice. Add a little soy sauce, garlic, ginger and a splash of oj to the veggies when almost done.
Fajitas or kebabs are another way to add more veggies to your diet.
Homemade vegetable soup is easy to make and healthy.
Roast a whole chicken with rosemary, garlic, and large chunks of carrots, onion, celery and halved new potatoes (and salt and pepper). Add a little chicken broth and bake, covered, about 1.5 hours at 375. It's done when you cut into it and the juices run clear. Then you'll have leftovers for sandwiches, salads, casseroles, etc.

You say healthy, but you want to gain weight, and you like pasta and sausage.....
I have a great recipe, but prob not so healthy. Just a few snack ideas.
Penne pasta
Sausage
Mushrooms
garlic
Optional:
peppers
Onions
Slice sausages into bite size pieces, brown in pan in half olive oil/half butter (or margarine) to create sauce. Add mushrooms and garlic and other veggies as desired.
Prepare penne according to directions, when done (slightly aldente) add to pan (by now the pan is a large pot for me) toss together and cook for a bit longer. You will probably have to add butter/oil to maintain a "sauce". I don't measure when I cook, but this one is easy to adjust and forgiving.
Healthy snacks;
apples and peanut butter
bananas
frozen grapes - great for sweet tooth attacks
slice tomato, top with slice of mozzarella cheese

This is a very loaded question. There are lots of answers here that I hope will help.
My suggestions:
Raw veggies with hummus
Adding lots of veggies to your sandwiches, like roasted red peppers, cucumbers, sprouts, onions, dark lettuce on whole grain breads.
Grab a peice of fruit to snack on even when you don't feel like eating fruit right now. ( I find apples work best for crunch)
Tuna on whole grain crackers
Choose chicken, fish or lean meats instead of sausages
Low fat ricotta cheese mixed with almond extract and sweetener
Nuts - very handy
Apples with nuttella
Frozen grapes
Frozen fruit bars
Granola Bars

not sure how healthy but homemade short bread is very tasty. here is a quick recipe 1stick of butter (soft) 3/4cup salted nuts (optional) 1/3cup sugar (extra 1 table spn) 1 cup flour 1/2 teaspoon vanilla Heat oven to 375 degrees in a medium bowl mix the butter and the 1/3 c of sugar til its a creamy texture. next add the flour and the vanilla then mix alittle with wooden spoon(plastic will do) then use your hand for the rest of the mixing until a ball of dough forms. lightly grease a small square pan and add dough by gently pressing into a sqaure evenly in the pan.. next if you choose add nuts on top and sprinkle the 1 tbs sugar over top and bake 15 20 mins or til lightly brown around edges.... if not using nuts still sprinkle the sugar for a nice taste..

-Make a fruit smoothie, make popsicles with the excess
- salads with egg, lettuce, cheese, tomat., carrots
- Nuttela sandwich
- lots of water
- stews with carrots, potatoes, beef
- sushi
- make some granola bars
- chicken alfredo pasta
- chicken or turkey sandwich
- fruit bowls
- vegetable packs( vegetables in little snack bags for rides in the car)
- spinich sauted in garlic
- or nan with hummus

Yesh mate.Im going healthy as well...well i was but iv started getting addicted 2 nutella on toast lol.Well theres celary i like celary lol but it makes u hungry so just fruit..go ahead!bars nd stuff are good.Nut bars.Nuts in gerneral..raisins sultanas...walkers light crisps um yeh// good luck anyway =]
