Yeast is a uni cellular fungus that converts sugars and starch in to carbon dioxide, air , and alcohol. There is no substitute for nature. Sorry to deliver the bad news.

There is no substitute for yeast. Certainly not if you want to produce the same results.
The main difference between chemical leavening (baking powder, baking soda, etc) and yeast leavening, in terms of outcome, is that yeast leavening actually changes the structure of the dough. Chemical leavening produces bubbles, of course, which gives the dough a lift.
But yeast---specifically, the reaction of the yeast with the proteins present in the flour, combined with the kneading/mixing provided by human hands---actually changes the properties of the dough. Bear in mind that pretzel dough is just a basic white-bread (yeast) dough. The yeast acts with the flour (and the kneading) to produce gluten, a high-protein framework that provides the texture and firmness of bread. In addition, the yeast creates CO2 as it respirates; yeast also produces alcohol as a by-product. The CO2 provides the bubbles within the bread's structure, and the alcohol contributes to the bread's characteristic aroma and flavor.
So basically, if you try making pretzels with anything other than yeast, you'll end up with biscuits that RESEMBLE pretzels.

Nothing. Yeast is unique. Well, no, but you have to have something else harder to get: Sourdough is a liquid yeast culture that you have to keep alive by using most of it and then adding water and flour to build it up again.
Other methods of rising use chemical reactions to produce carbon dioxide (soda & vineger, baking powder & heat) but they don't involve the interaction of yeast and flour.
