This might seem an odd combination - but horseradish sauce. I can assure you it's delicious with some smoked haddock (baked in foil with a little butter).
Get some tasty steamed vegetables, too!

Make kedgeree.
Chop & fry one onion in sunflower oil (or similar non-flavoured oil) in a big frying pan. When it's soft, add a level tablespoonful of mild curry powder. Let it swirl and heat up.
Add enough Basmati rice for as many people as you are feeding. Let it fry for about three minutes in the oniony oil. Next, add a ladle of vegetable stock (made with stock powder) like you were making a risotto. As each ladle is absorbed by the rice, add another one.
Meanwhile, cook the smoked haddock by poaching it in milk with a bayleaf. Hardboil 1 egg per two people and quarter each hardboiled egg. Cook some frozen peas until just done. Chop some flat-leaf parsley. You can also assemble some cooked shelled tiger prawns, if you have money.
When the rice is nearly done, flake the haddock and add it. Add the eggs, peas, chopped parsley and prawns. Keep adding little bits of stock until the rice is perfect.
A fabulous light supper, way way nicer than it sounded to me when I first read the recipe. The rice, the lightly smoked fish, the chewy prawns, the sweet peas, the fresh parsley and the faint exoticism of the curry powder make it delicious.

Boil some potatoes chopped up with swede and mash them together with butter and black pepper.
Lay your haddock flesh down on a plate add 2 tablespoons of water, wrap in clingfilm, put in microwave for 4 minute on high setting.
When fish is done make small slit in the clingfilm pour off the water. Take off the clingfilm, put a skillet under the fish turning it onto a clean plate flesh side up, coat with butter and serve with the potato/swede mash.
This is good enough to put hairs on your chest.

If its just smoked haddock then the tradtional accompaniment is a poached egg.
But if you want to do more with it you can make a nice fish pie;
flake the fish and mix with chopped boiled egg, then mix with cheese sauce and top with mashed potato. I assure you this is lovely!

I agree with heavymetalbitch (hope that's right LOL) cook the smoked haddock in the oven and when it's nearly ready, crack an egg on top and splash the juice over until it's cooked or put it back until the egg is cooked and serve with bread and real butter. Perfect.

2 assist smoked haddock- there is nothing better than some creamy mash potato with grated cheese mixed in2 it :-)
and some sweet cramelized baby carrots(put in pan of water, coverin them, add a t-spoon of butter and 2-3 t-spoons of sugar, dependin on how sweet u want them.

Turn it into kedgeree! Boil some rice, a couple of hardboiled eggs, a handful of peas, break fish up, mix with rice and peas and add quartered halfboiled eggs on top. Yumm

My favourite thing to do is poach it in milk and butter with some black pepper, then when it's cooked thicken the milk with cornflour, add some chives, and serve with crusty bread.

I usually have 3 pieces on it's own and it fills me up but I like this poached egg idea people are suggesting. Sounds easy and delicious!
