Most off the above are right, but what i've found over the years is that if you haven't got a good oven your screwed. Just keep experimenting with different recipe's and the high oven temp. And if that doen't work buy a new oven or the cheaper option just buy frozen yorkies which are pretty good these days

something you forgot to do?

Did you rest the mix in the fridge for at least 30 mins? make sure the fat was hot in the moulds? Not banging the cooker top whilst cooking the puddings? Not opening the oven door half way cooking? Were you accurate when you measured the ingredients?

All the answers you have had are correct to a point, but dont worry you have made perfect traditional yorkshire pudding. same as champagne, the rise came as an accident but is now the norm.

Chuck Delia out of the window.

Make sure your oven is REALLY HOT.

Make sure the fat is SMOKING HOT.

Get the mixture into the tin as quick as you can DON'T slam the door.

Do not attempt to open the door while cooking.

you have to leave the mixture once made for about 20 mins then pour it into a hot oiled yorkshire pudding tin. dont open the oven door alot as that sinks them

Yorkshire pud is a weird one. It's said you should use plain flour but either will work.

My Mum is brilliant at Yorkies but even she can make them for weeks in a row then have a flop.

Don't lose heart, keep practising.

300ml (½ pint) Milk
110g (4 oz) Plain Flour
1 Egg
Oil, Lard or Dripping

main thing with yorkshires is the oil ..... it has to be sizzling hot .. always dip a small bit of mixture in the hot oil before pouring it all in and if it bubbles you will know its hot enough .
Oh and dont open the oven while they are cooking......

I was going to answer this question but you have some pretty good answers there, take note at what they are saying, most are right, stand the batter, the oil sizzling hot, hot oven.. don't open the door..

It never rises the first time one tries the recipe. You have to "add" the additional ingredient of the experience of others.
