Saute spinach in olive oil with garlic, lemon zest and kosher salt. Serve as a side with your favorite meats. Another great recipe is "creamed spinach", wherein you saute it and add chunks of cream cheese to create a rich creamy mixture. Add kosher salt and fresh ground pepper and serve with a grilled rib-eye steak. I love fresh spinach added to pasta cooked in a rich beef stock with a little wine and fresh parmesan cheese grated in. Also, steam fresh spinach, drain, and mix with feta cheese. Stuff chicken breasts with the mixture and bake until cooked thru.

Fry 1 large onion in some oil until almost brown, add 1 clove of garlic and as much well washed spinach as you like. Cook until wilted and add some salt and pepper. For some added crunch dry fry some pinenuts in a separate frying pan and add it to the spinach. A bit of squeezed lemon juice gives it a nice tangy taste. I have atleast once a week. Enjoy

I love to put it in a big skillet with some olive oil and garlic and wilt it just a wee bit.

Blue Sea recommended pretty much what I would say, except I also like it with toasted walnuts tossed in, and stir it into pasta.
