This is my favorite soup and I am always asked for the recipe. The sausage gives it a rich flavor.
Zinfandel Minestrone
1 pound hot Italian sausage
1 pound mild Italian sausage
1 chopped onion
3 carrots, chopped
1 zucchini, sliced
4 cloves garlic, chopped
3 quarts chicken broth
2 cans diced tomatoes
2 cans cannelloni beans, rinsed and drained
1 tablespoon dried basil
¼ cup Zinfandel
2 cups large shell-shaped pasta
Salt and pepper to taste
1 cup fresh grated parmesan cheese
1. Squeeze sausages from casings into a large pan. Cook until brown and crumbly, approximately 10 minutes. Discard fat.
2. Add carrots, onion, zucchini, and garlic. Cook for about 6 minutes until onions are soft.
3. Add chicken broth, tomatoes, beans, basil, and Zinfandel. Bring to a boil.
4. Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.
5. Add salt and pepper. Serve into bowls and top with parmesan cheese.
This will make 12 servings.

Vegetable soup made in a pressure cooker using potatoes, carrots, parsnips, leeks, onions, garlic. Add stock cubes and vegetable bouillon powder to the water. Any excess soup can be frozen. Takes about one hour including cleaning and chopping the vegetables. Meat can also be added and it is traditional here in Ireland to use shin beef. Beautiful for a Winters evening>

Cream of Mushroom, Cream of Tomato, Chicken Noodle - homemade, Cream of Potato, Cream of Chicken, Beef and Barley, Split Pea and Navy Bean or 15 Bean - both with warm corn bread.

OO soup-
two cans of Heinz vegatable soup,
two can of tomato soup (made with water),
2 packs of unflavored Ramin Noodles broken up in small pieces,
garlic,
a quarter of a cup of heinz 57 bold and spicy.
a package of frozen mixed veggies (canned can be used)
optional-left over cut cooked chicken, pork and/or beef
Cook until noodles are tender. serve warm

My gran in Scotland (many years ago) used to make a scotch broth, I can remember carrying sealed jars of this to my Aunt's & Uncle's houses, they all lived very close.
Although nowadays I think a nice vegetable soup goes down well.

I really like soups made with root vegetables like sweet potato, parsnip or butternut squash..they have such a nice taste. I'm so glad its nearly halloween so i can get a pumkin and make pumkin soup yay ! :)
