You DON'T. What good will it do? Unless they're going to be cooking for you on a regular basis, simply thank them for the EFFORT of cooking the meal, and then go home and eat what you like.
Etiquette isn't about absolute, bald-faced honesty; it's about being polite while still telling the truth; I believe that's called "tact."

I personal won't eat anything I don't like or don't know what it is. If I was invited to meal, I ask what's on the menu and let them know what I can't eat. If I was surprise with a meal, I would tell them the truth.

Never ever tell anyone that you do not like their cooking. Remember sometimes tell a little white lie is okay. If there are some foods you do not like then honesty is the best thing to do.

You thank them for the meal and tell them you liked it regardless, but then add, "You know what could make this even better? Try adding..." and name the improvement that could be made to the dish. That way the person has an idea of what to accomplish next time they make the same meal.

I agree with what most others have said here. You do not tell. And if they ask you how it is, you lie. The truth will make them angry or depressed no matter how much you sugar coat it. A sweet sounding lie is the only thing to be said in such a situation.

Dont tell them, if my partner turns his nose up at my food i get realy angry as i have put effort into cooking it. If they offer to make it for you again just tell them you are not too keen on that dish & would prefer another.

Say I have never been a fan of 'baked potatoes' or 'fried tomatoes' be specific, and say that was just not your favorite maybe you would like them if they were made a different way..

would depend on who the person is and how close you are.
if it was by best friend or family - I would just be honest.
If you don't know them well, the first answer would be good.
