do twice baked potatoes
bake them just like regular potatoes then cut them in half (long ways) then scoop out the inside mash and mix with butter, sour cream, a little salt and pepper. then put them back in the oven using the skins as a bowl for about 20 min or so then top with bacon and cheese.

For mashed try adding these to the boiled and mashed potato;
Ranch and Bacon bits
Cheddar, baon bits, chives and sourcream
cheddar and finely chopped cooked broccoli
cheddar and sour cream
Cheddar, butter and garlic powder
finely chopped ham and cheddar
Blue cheese crumbles, butter and sour cream
Add milk to get the creaminess you like
For Baked any of the above will work plus try;
chili and cheddar
salsa, sour cream, cheddar
creamed corn and butter
cottage cheese, marinara and a little mozzarella
Brown gravy with mushrooms
creamed tuna or salmon
I love potatoes and will eat them about any way you can think of!

I use a hefty dose of garlic in my mashed potatoes along with the cream cheese. Then the leftovers (when there are any!) get a bit of sour cream and milk or cream. I spread that in a baking dish, top with tons of cheddar, and some sliced green onions. Then bake until heated through and the cheese is melted. It's great comfort food.

Do you mean baked or mashed or both? I normally boil my mashed potatoes. Well, when mashing I like to add either hard or soft cheese as well as milk or butter. Add spring onions and cheese to make champ. Baked potatoes are really good if you crack an egg into them 15 mins before the end of the cooking time.

These are really good!
Crock Pot mashed Potatoes
2 Pkgs. 8 oz cream cheese softened
1/2 Cup butter softened
2 Tsp dried parsley flakes
7-8 potatoes
1 Cup sour cream
2 envelopes ranch salad dressing
5 cups milk
Boil potatoes and mash. In seperate bowl mix cream cheese, sour cream, butter salad dressing mix and parsley flakes. Blend with potatoes. Transfer to lightly greased crock pot and cook on low for 2-4 hours.

I love potatoes. I have so many recipes for them. I'll give you a few of my faves, some more healthy than others. I generally use basic red skinned potatoes for most of my recipes. I find them pretty versatile for most anything. Plus, I don't have to peel them.
The first is really easy, and light, well as light as potatoes can be. Quarter and boil your potatoes until they are tender in water that you have seasoned well with salt. I would say at least 2 tbsp. Once they are done add about 3 tbsp. of olive oils and 1 tbsp. each of salt, pepper, lemon zest and fresh chopped parsley. I know the lemon seems odd, but it's really good.
You can also boil the potatoes the same way, but undercook them buy about 3 minutes. Then smash them, you still want them slightly chunky with 1 small container of ranch dressing and 2 tbsp of butter with a pinch of S & P. Put this in a greased baking dish and bake on 400 for about 20 minutes, just until the top gets brown. Then top with a bag of cheddar cheese, crumbled bacon (I always get the precooked bacon - scared of the popping grease), and french's onion rings and pop it back in the oven until the cheese is melted. Oh my goodness it's so good. If you want to go really over the top dollop some sour cream on top. It really is a meal in itself.
For mashed potatoes I generally use whatever potatoe I have on hand cut into equal sized pieces. I would say I generally use about 4 good sized potatoes. Then I melt 1/2 stick of butter and 1 can of evaporated milk on medium in the mic for about 2 minutes. Just until the butter is melted. The mash this into your potatoes, don't add it all at once. You might need less or more according to your potatoes. Don't forget to S & P before you serve. You could also reduce your canned mild and add some sour cream. Right before you are going to serve add about 1/4 c. of fresh chopped chives. If you want to dress them up a little bit you change your recipe slightly. Instead of melting 1/2 stick of butter only use 2 tbsp. In a sautee pan use 3 tbsp. of olive oil and 4 cloves of garlic on a really low heat for about 20 minutes. You only want them to brown, not burn at all. If you burn the garlic at all you want to start all over again. Mix the oil and the garlic right into your mashed potatoes. If you want to get really fancy make the basic mashed potato recipe and top with a pat of truffle butter right before you are going to serve them.

melt butter and add crushed garlic, simmer to absorb flavours, discard galic chunk and add galrlic butter to potatoes when you whip them. also a big scoop of sour cream, then bake
i like adding mushrooms, onions and peppers, then bake add grated cheese ontop
add a can of mushroom soup or cream of celery then bake
i have not tried this but i think it would be nice cuz i use this flavour with potatoes alot of different ways...add a package of onion soup mix
add lots of cheese whiz, then a different kind of cheese ontop

Leave the skins on. Add sourcream, marg. alittle milk,crumbled bacon, diced onion or onion powder, a 1/2 clove minced garlic, and shredded cheddar cheese. You could top with finely crushed wheaties mixed with margrine. Delicious!!
