If anyone has a link to a site that will provide this kind of info I would appreicate it. Same with how long can you keep items after the sale date? For Example, yogurt, cottage cheese, sour cream all have dates posted on the container, but to prevent food poisoning when should I toss it and when can we still eat it safely?? Not just dairy products all foods!! Leftovers?? We all know that if you see mold that's obvious but the nose can't always tell.

The sites below offer great information on freezing food correctly, thawing it in a desired way, and how long meat will be "fresh" once it is defrosted in the refrigerator. The second site says poultry and ground meat need to be used within 24 hours of defrosting, and red meat (like a beef roast) can be kept in the fridge for 3-4 days before it will go bad. The bottom of the page has a chart that says how long to allow different sorts of frozen meat to defrost in the refrigerator.

If you bought the meat at reduced cost because it has reached the "sell by" date, then use it within 24 hours of defrosting. I usually defrost reduced meat in the microwave and cook it right away so that bacteria that might be present when I bought it won't have the opportunity to start becoming active again once the meat is thawed.

Thawed food should not be kept more than two days in the fridge after thawing. Left overs which have been promptly refrigerated should be eaten within 5 days of putting them into the fridge for optimum taste and safety. If a dairy product has a date on the container pitch it if it is after the expiration date. If it is a sell by date you usually have 7 days after that where the product is still edible. I always feel it is better to be on the safe side than chance food poisioning or even minor upsets from products that are past their prime.

Try the CDC website. Also, all states will keep current info on expiration dates for perishables; check your states Health Dept. site for their recommendations (the regulations only effect restaurants and groceries, they can't tell private citizens to throw food away - relying on common sense). I would not consume most dairies after its expired, the exception is yogurt and cheese. A little taste test will not send you to the hospital. As for meats, you have various time periods. In Texas, once we thaw meats for use, we have two days to sell it. The exception to this is tuna, salami, and pepperoni - all three days.

I wouldn't ever want to have to keep food so long that it has a chance of going bad or growing mold. All meats have the potential of going bad before we expect them too. That is because once air hits it, it is already going bad. Especially roast beef ((lots of blood), and chicken (salnonella ).
Most diariy items have a "sell by" date...butI try to USE it by that date.
Even when items are properly refrigerated one never knows where its been (on some floor), who has touched it (dirty hands), or how it was prepared (manufacturing/production standards)
