A roast with all the trimmings - lamb, pork or beef depending on what looks best at the butchers, or a chicken if I can get a good one - served with proper roast potatoes, mash, veg, Yorkshire pudding, gravy and sauces/stuffing as appropriate. Many of my friends are single and they don't often get a proper dinner like this (it's a lot to cook just for yourself, although I do it quite regularly). You can also do a lot of the preparation in advance and the roast pretty much takes care of itself while cooking, so I find it less hassle then a lot of 'quicker' dishes (even though it looks like you've spent the last two days in the kitchen!).

Salmon steaks ( get the cheap frozen ones from Lidls ), smothered in Hollandaise sauce ( use a packet, it's more convnient ) accompanied by tender new potatoes and broccoli. The salmon can be simply baked in the oven ( lube with olive oil or butter ) and the whole meal is manageable if time/space is tight. Also, it looks like it's come out of a gourmet platter, particularly if the broccoli is bright green and lightly cooked. But just make sure everyone likes it before you serve!

I nearly always do curry chicken and rice . Here's the recipe.
Chicken curry and rice.
Ingredients: 1 red pepper, 1 green pepper, 1 large onion. 2 pieces of garlic. 1 can of tomato pure 2 potatoes. 1 carrot, 1 apple 2 slices of pineapple, Breast of chicken, rice, salt, pepper - 1 cup of cooking cream, 1/2 cup of olive oil, curry powder and curry sauce(if you have it)
1. keeping aside the chicken breast cut in cubes, the pineapple the cooking cream, and the curry, chop or grate the rest into small pieces and place in a pot with a small glass of olive oil and stir fry slowly moving it with a wooden spoon. Add some pieces of chicken breast chopped very finely and leave all the ingredients to cook slowly. After a few minutes, when it starts to cook, add a glass of water but not much. After about half an hour of simmering all the ingredients should look saucy so then you add pineapple and curry sauce and curry powder and simmer for another 10 minutes adding a 1/2 glass of fresh cream in the last minute. If it looks too chunky you can liquidise it after.
2. Stir fry the chicken breast in a drop of oil on a seperate pan and add a pinch of curry powder. When the chicken is done, thow it into the pot with the other ingredients. ( test it for salting)
3, Serve with boiled white rice and Bon Appetite!!.

Most of the guests who stay for dinner are family -- and my family loves spaghetti, lasagna, pizza. I make my own marinara and keep plenty in the freezer. I can assemble any pasta dish or pizza at a moments notice -- but I like to take my time with the bread (also homemade). As a side dish, we prefer something that's simple and not too heavy like salad with a light viniagrette.

Nothing ... for casual guests.. A cup of tea, cake or biscuits, perhaps a drink but I don't expect to feed t hem.. If I have invited them to dinner or lunch or supper that is a different matter. Then I will have planned and prepares the meal... Not a case of deciding anything in a hurry,

Depends on the season or the time of day I have guests. I love to do brunch with egg casserole, bacon and sausage, waffles or french toast, fresh coffee cake and juice and fruits.
If I do dinner in the summer its grilled steaks and a salad, in the winter it's usually lasagna and fresh baked bread.

I am pretty versatile in my cooking. So It depends a lot on the type of guests I am having. For guests who can adapt to other cuisines, I will go for Asian dishes like curry, fried noodles, fried rice, stir-fry dishes etc. For the traditional types, the dishes served normally will be their own cuisine.
