Okami ps2 - help!?

how do i dig things up that are under rock? and how do i learn the double jump thing? i have just got to the city but i think i have missed loads out

You probably haven't missed out, there are some bits you can't do early on until you learn the relevant brush-techniques later, and you will revisit some of the sites as part of the plot.
