Ok, here's one that I make up and use as a basis for every pasta dish I make:
1 28 oz can good tomato sauce
1 15 oz can diced tomatos
1/2 cup good red wine
1/2 yellow onion, diced
3 cloves garlic, minced
2 lbs turkey Italian sausage, casings removed
3 T dried Italian herbs
1/2 cup chopped fresh basil
1 Tsp kosher salt
1/2 tsp fresh ground pepper
1 T brown sugar
1/8 - 1/4 tsp red pepper flakes
1/2 cup grated parmesan cheese
1/2 cup good olive oil
Saute onion, garlic and sausage until translucent and meat is no longer pink. Drain and add the rest of the ingrediants. Bring to a boil, cover and simmer for 1 hour. Remove lid and simmer until thickened. Serve over your favorite pasta or use in your favorite lasagne dish.

Chop about 1 kg of very ripe tomatoes, add 8 cloves of garlic, 1 large chopped onion, 1 bunch of thyme and 1 bunch of oregano, half of cup of olive oil and 1 can of diced tomatoes. Bake for 2 hours on 180 degrees . This is a basic sauce that can be used with minced meat or canned tuna, salmon or used on it's own with favourite pasta. Don't forget the salt and pepper and chili if you like a bit of bite. freezers realy well. ENJOY because I do

Assuming you mean from canned tomatoes (I only make it from raw tomatoes in big batches and then freeze)
Meat Sauce
brown about 1 1/2 # ground beef - drain if needed
chop about 1 cup each green pepper and onion - add to beef part way through to soften (add 1 shredded carrot also if desired)
When beef and veggies are ready, add the following:
garlic to taste (about 3 cloves-crushed- for me)
28 - 34 oz. canned tomato sauce
1 can tomato paste (I think it's a 6 ounce can)
Salt and pepper to taste
Lots of herbs - parsley, oregano, basil, thyme, sage
a little sugar and a little tabasco and a bay leaf
Cover and let simmer for at least 2 hours, stirring occasionally. Add more tomato sauce if it's too thick; remove the lid if too thin. Add mushrooms if desired.

Meaty Spaghetti Sauce
INGREDIENTS
1 pound lean ground beef
1 pound pork sausage
2 ounces sliced pepperoni sausage
1 green bell pepper, chopped
1/2 red bell pepper, chopped
1 tablespoon minced garlic
2 onions, chopped
2 carrots, diced
2 stalks celery, chopped
1 (8 ounce) can sliced mushrooms
1 (15 ounce) can tomato sauce
2 (14.5 ounce) cans diced tomatoes
2 (6 ounce) cans tomato paste
3 cubes beef bouillon cube
3 bay leaves
1 tablespoon dried thyme
1 1/2 tablespoons dried oregano
1 1/2 teaspoons dried basil
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
1 tablespoon white sugar
1 cup beef broth
DIRECTIONS
In a large stockpot cook the ground beef, sausage, pepperoni, green bell pepper, red bell pepper, garlic, onion, carrots and celery. Cook until beef is no longer pink. Drain into a large colander to drain grease.
To the large saucepot, add the mushrooms, tomato sauce, tomatoes, tomato paste, bouillon cubes, bay leaves, thyme, oregano, basil, crushed red pepper, black pepper, sugar, and beef broth and stir well. Pour the meat mixture into the pot. Bring to a boil, reduce heat and cover. Simmer for 2 hours.
Wine Tip
Try with an Italian red like Aglianico, Barbera or Chianti Classico.

If you want a super easy, fast home sauce, do this: Brown 1 lb. mild Italian sausage in a pan with one onion, chopped, and some chopped garlic. Put in a can of spaghetti sauce of your choosing, and then the secret weapon: a can of diced tomatoes, juice and all. This makes it taste much fresher than it would have otherwise. If you don't have Italian sausage, hamburger and a sprinkle of anise seed and Italian seasonings could fake the sausage taste.

a good homemade pasta sauce is the one which uses seasonal products: simple deepfried cherry tomatoes and basil in the summer, butter and sage for ravioli (stuffed pasta) or a mushroom sauce in fall, bolognaise sauce (made with beef mince, wine, herbs and a teaspoon of tomato paste) in winter, oil, garlic and chilli in spring etc....
