When I buy a chunk of Feta cheese and use only half of it. The rest I wrap up in cling wrap but after a day or two it starts smelling really bad and I have to throw it out. I tried storing it in a container but end up with the same result.

The Greeks store it in a brine solution and actually you should never buy feta unless it's in liquid .
The proper ratio is a quart of water to 3/4 C of Kosher salt ,Keep the feta submerged and handle with clean utensils

I stored some Feta I had in a container of water and that seemed to work for a few weeks, but after about a month it went off.

I buy fetta in a 1 kilo tub.. seems to have some sort of juicy cheese liquid already in there... I shall name it Brine (after my brother).... this seems to work perfectly for retaining the cheese.

I quite like all things to do with cheese... and ham off the bone.

Just keep it in the container that the deli gives it to you in, the brine actually has a load of salt in it that preserves the cheese. Great luck!!!

Did you leave it in the wrap? I have kept it a long time in a container but not wrapped. Hope that helps.
