Juicy Purple Fruit Salad
1 lb. bag frozen blueberries
1 lb. bag frozen sliced peaches
1 lb. bag frozen sliced strawberries
3-4 large bananas, sliced
1 (16 oz.) can chopped pineapple, drained
3/4 c. sugar
1 T. lemon juice
Combine all ingredients while frozen. Refrigerate at least 3 hours. Stir when thawed and serve with cool whip or homemade whipping cream.
(This is always popular when I make it for special occasions)

the one thing i can think of that fits your criteria is steak tartare. no cooking, no added oil. you may have to cook the toast points, though-- does that count?
another option is sushi, but you'd have to cook the rice.
other things:
banana and almond-butter (instead of peanut butter) sandwiches. (best with added mayo though).
fruit salad as an additional course.
smoothies to drink.
granola and yogurt with fresh fruit.
that's about it. enjoy. (find recipes for tartare very easily on the web).

BRUNCH PUNCH
1 (6 oz.) can Tropicana orange juice concentrate, thawed
1 (6 oz.) can lemonade concentrate, thawed
1 qt. cranberry juice, chilled
1 qt. ginger ale, chilled
1 fresh orange, sliced
Mix thawed orange juice, lemonade, cranberry juice and chill until party time. Then add ginger ale and oranges. Makes 10 3/4 cups.
HOLIDAY BRUNCH FROZEN FRUIT CUP
3 mashed bananas
1 (#2) can (about 20 oz.) crushed pineapple, including juice
1 c. sugar
2 (6 oz.) cans frozen orange juice
Juice of 2 lemons
1 c. ginger ale
1 pt. fresh fruit, chopped (can use frozen or canned fruit, drained)
Mix. Freeze in kitchen-size Dixie cups. Makes 15 cups.
BRUNCH QUESADILLAS WITH FRUIT SALSA
1 pt. fresh strawberries, hulled and diced
1 fresh ripe Anjou pear, cored and diced
1 tbsp. chopped fresh cilantro
1 tbsp. honey
1 c. (4 oz.) Sargento Preferred Light Fancy Shredded Mozzarella Cheese
4 flour tortillas (8 inches in diameter)
2 tsp. light butter, melted
2 tbsp. light sour cream
To make Fruit Salsa, combine strawberries, pear, cilantro and honey in medium bowl; set aside.
Sprinkle 2 tablespoons cheese on one half of each tortilla. Top with 1/3 cup salsa (drain and discard any liquid that has formed from the fruit) and another 2 tablespoons cheese on each tortilla. Fold tortillas in half. Brush top of each folded tortilla with some of the melted butter.
Grill folded tortillas, buttered-side-down, in dry preheated skillet until light golden brown and crisp, about 2 minutes. Brush tops with remaining melted butter; turn and brown other sides. Remove to serving plate or platter. Cut each tortilla in half. Serve with remaining Fruit Salsa. Garnish with sour cream. Serve immediately. Makes 4 servings.
CUCUMBER SANDWICHES
1 (8 oz.) pkg. softened cream cheese
1 stick butter, softened
1 pkg. Good Seasons mild Italian dressing (dry)
1 (8 oz.) loaf party rye bread
2 cucumbers, unpeeled & thinly sliced
Dill weed for garnish
Combine cream cheese, butter and dressing mix. Refrigerate for several hours or overnight. Spread on each slice of bread, top with cucumber slice and sprinkle with dill. Serve immediately.
PARTY SANDWICH LOAF
1 loaf unsliced white bread
Butter
1 can deviled ham
1/4 c. sweet pickle relish
1 med. jar Cheez Whiz
1 recipe egg salad made with 4 eggs
Softened cream cheese
Milk
Food coloring
Slice bread LENGTHWISE into 4 slices. Butter slices, combine the deviled ham and pickle relish and spread on one slice of the bread. Top with second slice of bread - buttered side down and spread with Cheez Whiz. Top with third slice of bread-buttered side down, and spread with egg salad. Top with remaining slice-buttered side down. Wrap with plastic wrap and refrigerate overnight.
When ready to serve blend room temperature cream cheese with small amount of milk to spreading consistency, tint with food coloring and frost sandwich loaf. Refrigerate and slice thin to serve.
Transfer the frosted loaf to a pretty party tray and decorate with grape cluster, fresh flowers, parsley, vegetable cut outs, etc.
