165 degrees farenheit....rare or not...a roast will continue to cook for almost ten minutes after taking out. Seal your roast any kind in foil at 350 for 2 hours and it will be perfect temp and texture ALWAYS...honest.....forget the fancy once you get this down you can add any and all spices....this is the trick....

If you want to know if meat is cooked, the easiest ways to find out is:

Chicken and pork- juices run clear

Beef- Stick a sharp knife into the centre of the meat and pull out, place blade against the inside of your wrist. If its warm- not cooked, piping hot- cooked. Weird as it may sound but I was taught this during my chefing training. Oh and to determine if the beef if well done, mediun rear etc- judge of how much blood comes out from where you placed the knife. Trust me- it works for me!!!!!
