I am currently searching the top 5 HOME MADE chocolate icing recipes for cakes. Any suggestions? Please remember that I do not want canned nor bottled products, my interest is to find a recipe made from scratch at home. thanks

I don't really have a recipe because this is my own tecnique... but I like to make chocolate icing by boiling corn syrup and ovaltine. It actually turns out really good. =)

I like to use the one off the back of the box of Nestle unsweetened chocolate, but use twice as much chocolate as it calls for. I think they make a lighter chocolate frosting because the cake recipe uses 3/4 of the box, so the icing uses the other quarter!

The best chocolate icing recipe:

3 eggs whites
250 grs. margarine (I use light)
220 dark chocolate
220 milk chocolate
0.75 cup of sugar
1 teaspoon of vanilla .

Melt the chocolate, then whip the egg whites, add the sugar, the margarine, the vanilla essence and the melted chocolate, mix very good and put in the fridge for 5-10 min. and then it is ready for decorate the cake. This icing is super delicious.

CHOCOLATE GLAZE:
2/3 cup icing sugar, 4 tsp milk, 2tsp cocoa (sifted), 1/8 tsp vanilla.
Combine in small bowl, add milk or icing sugar in necessary.
Consistancy should be pourable.

Buy dark chocolate chips and heavy cream...melt down and mix in sauce pan on stove...VERY LOW, or else it will burn and taste nasty.
pour this hot melted creamy chocolate over whatever your making (i use vanilla pound cake) and put it in the fridge for it to harden. it won't be as hard as the chocolate chips because the heavy cream kept it softer. it's called GANASH, and it's amazing..........and simple to make.

buy the dark unsweetened chocolate

melt it with half a stick of butter, a little milk, half a cup of sugar
