Ok...most of you didn't get me cause I was terribly flawed in my description. I HAVE these chocolate covered cherries. Probably about 15-20 of them. Big ones. I want to make a Black Forest Cake,,,,kinda sorta. I'm thinking why not just toss these cherries into the batter...or...there was a good idea...make brownies and toss them in there....see ... something like THAT.

I don't know how many chocolate covered cherries you have, but you can either add them to the cherry pie filling traditionally used in Black Forest cake or substitute them in total for the canned filling.

Or give them a rough cut and add them to brownies. Or use in an ice cream sundae. Or just enjoy them as is!

This is an easy recipe and you can make more or less of each, using dark or milk chocolate. Any leftover melted chocolate can be turned into fancy chocolate cups.

Squeeze out the syrup from the cherries; reshape and place cherries on paper towels; refrigerate cherries until cold. In the meantime, melt the chocolate.


How:
Fill a small pot a 1/3 way with hot tap water and bring to a boil over high heat. Break apart and set the chocolate in the medium bowl; place over pot. When the water comes to a boil, immediately reduce the heat to low and then melt the chocolate, stirring slowly and constantly, using an oven mitt to hold the bowl. When the chocolate has melted, remove the bowl from the heat.

Chocolate Covered Cherries:
Line a jellyroll pan with parchment paper. Drag a cherry through the melted chocolate, coating the cherry evenly and covering a bit of the stem with chocolate, and then across the rim of the bowl to remove excess chocolate; set cherry onto parchment paper. Don't worry if some cherries lean over/topple as their chocolate covering hardens: that's their charm. Store the finished cherries in a tightly sealed plastic container to prevent chocolate from "Blooming". Serve the cherries in small frilled paper cups or on a platter lined with a paper doily.

Use normal chocolate cake. Once baked cut in two layers. Use cherry or blackcurrant jam to spread over bottom layer. Replace top layer. Make ganache by heating cream in a saucepan until simmering. Remove from the heat and stir in melted chocolate. Place in fridge to cool. Use beaters on cooled mix until it stiffens. cover cake and add chocolate cherries to top along with flaked chocolate. enjoy

You can heat the chocolate and dip the cherries in that... then chill them. They are fresh cherries aren't they? Serve this with West Austalian Chablis

Black Forest Cake
1 dark chocolate cake mix (or your own from scratch)
1/4 c. kirsch (cherry brandy)
1 can cherry pie filling
16 oz. heavy whipping cream
1/2 c. confectioners' sugar
Maraschino cherries, drained, optional, for garnish
milk chocolate curls or shavings, for garnish
Drain cherry pie filling in a colander to remove most of the thickened juices.
Make cake, following package directions. Bake cake, as directed, in two 9-inch layer cake pans.
When cool, sprinkle kirsch over both cake layers.
Chill electric beaters and large mixing bowl; beat cream until it thickens slightly, gradually add confectioners' sugar and beat until thick enough to hold its shape.
Using a vegetable peeler, shave chocolate; refrigerate until ready to serve.
Assemble cake; place one layer on serving plate and spread its top with 1/2-inch thick layer of whipped cream and strew the cherries over the cream leaving about 1/2 inch margin around border of cake with no cherries.
Set other layer on top of cherries and spread top and sides of cake with remaining cream, shape whipped cream into decorative swirls on top.
With fingers, gently press chocolate curls into cream on sides of cake.
Garnish top with drained maraschino cherries, if desired, or with a few remaining chocolate curls.
