Because the sugars break down into smaller molecules (glucose) from its longer polysaccharide form (starch) the longer you keep them.

OK true they ripen but that does explain the process ( fermentation) - the sugar in the fruit starts to ferment and that's what gives it a sweeter taste.

They are the sweetest when the little dots appear that's when the sugars have developed. After when the little black dots disappear and the banana starts getting too ripe and isn't very tasty,then you can use them in baking.

They get riper and when they ripen, they get sweeter.. it happens with most fruits.. unfortunately if they 'go over' they get soggy and nasty.. You can use them to make a nice banana cake when they 'go over'..
