Many Christians claim certain prophecy has been "fullfilled" because they are vague.(the alleged prophecy, not the Christians.lol) and/or more often than not were written from hindsight perspective.
Specifically as to the examples of Daniel written by an earlier poster. Daniel was written ca 169bce The 4 beasts in Daniel's dream (Chapter 7) refer to 4 ancient civilizations: the lion/eagle vision is a blending of the most powerful land animal and the most powerful bird; it represented King Nebuchadnezzar's Neo-Babylonian empire.
The bear represented the Median Empire.
The leopard is the Persian Empire.
The terrible beast represents the Seleucid Empire.
Since the book was written AFTER the rise of the final empire, the author had the advantage of hindsight; the book is a history of past events, not prophecy of the future.

I do apologize for the lengthy responses but you asked a question that called for one :)
When it comes to the messianic prophecies, all of them came true. Here a some examples:
I've chosen some that he could not have knowingly arranged to fulfill -
Isaiah 9:7 prophecied he would be a descendant of King David ... Matthew 1:1,16,17 shows his geneology and therefore that prophecy as true. (How could he choose who his family would be?)
Isaiah 53:1 prophecied he would not be believed in ... John 12:37,38 proves it came true. (how would he be able to control other people's attitude's towards him)
Zechariah 11:12 said that he would be betrayed for 30 pieces of silver ... fulfilled in Matt. 26:14-16 (did he talk Judas into betraying him AND set the price he would get?)
Isaiah 53:9 said he would be buried with the rich. Matt. 27:57-60 shows it happened. (Did he arrange this ahead of time? Not likely, those rich rulers were afraid to lose their positions so they kept their belief in Jesus pretty quiet. It's doubtful they were well known.)
Read the book of Daniel and compare it with ancient history. All of the prophecies he wrote about the destruction of Babylon, etc. came true. They were so accurate, in fact, that critics claimed Daniel was actually a history book and not a book of prophecy. Well that was all well and good until the discovery of the dead sea scrolls. These contained fragments of early copies of the book of Daniel dating back to about 100 years before it's fulfillment.

Jesus fulfilled all the Messianic prophecies. I have a book by Benny Hinn that writes them. And there are web sites that have them written. Do a web search for "Messianic Prophecies". I just did & they had some good sites at the top.

In Deuteronomy 18, Moses stated that God told him: “I will raise up for them a prophet like you from among their brothers; I will put my words in his mouth, and he will tell them everything I command him. If anyone does not listen to my words that the prophet speaks in my name, I myself will call him to account.” (Deuteronomy 18:18-19).1
The Christians believe this prophecies is about Jesus. But the Muslim believe its about Mohamed ASOS. The Jews believe neither.

Ezekiel 37:16 20
37:16 Moreover, thou son of man, take thee one stick, and write upon it, For Judah, and for the children of Israel his companions: then take another stick, and write upon it, For Joseph, the stick of Ephraim, and [for] all the house of Israel his companions:
37:17 And join them one to another into one stick; and they shall become one in thine hand.
37:18 And when the children of thy people shall speak unto thee, saying, Wilt thou not shew us what thou [meanest] by these?
37:19 Say unto them, Thus saith the Lord GOD; Behold, I will take the stick of Joseph, which [is] in the hand of Ephraim, and the tribes of Israel his fellows, and will put them with him, [even] with the stick of Judah, and make them one stick, and they shall be one in mine hand.
37:20 And the sticks whereon thou writest shall be in thine hand before their eyes.
THIS ONCE CAME TRUE IN 1982 WHEN THE BOOK OF MORMON AND THE HOLY BIBLE BECAME ONE! I personally have a quad!

Do not seek after signs. Prophesy is given to enrich us, not to make proofs.

Tons of the predictions have come true. For example, there were prophesies made about the Second Coming. Some of the details have already come true, such as wars and rumors of wars.
