CREAM FILLED CONFETTI COOKIES
COOKIES:
1 c. sugar
1/2 c. softened butter
1/4 c. shortening
1 tsp. vanilla
2 eggs
2 1/2 c. all purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/3 c. multi colored candy sprinkles
FILLING:
3/4 c. butter, softened
2 c. XXXX sugar
1 tsp. vanilla
1 egg
2-3 drops food coloring
In large bowl combine sugar, 1/2 cup butter, shortening, 1 teaspoon vanilla and 2 eggs; beat well. Add flour, baking powder and salt; mix well. Stir in candy sprinkles. Cover dough well and refrigerate for at least an hour.
Heat oven to 350 degrees. On floured surface roll out dough to little over 1/8" thick. Cut out with 2" cookie cutter. Bake in an ungreased cookie sheet until just lightly browned. Cool completely.
In medium bowl beat 3/4 cup butter; gradually add XXXX sugar and blend well. Add 1 teaspoon vanilla and 1 egg; beat until light and fluffy. Can add a few drops of food coloring, then blend well. Spread 1 heaping teaspoon of filling between 2 cookies. Makes about 3 1/2 dozen filled cookies.
Cookie cutters of assorted shapes and sizes can be used.

You can't beat Toll House cookie recipe. I make them with a little less flour (like a couple tablespoons less) and melt all the butter first so the dough is really loose, and bake them about a minute less than called for. These steps make a flat bumpy chewy cookie like you get in a bakery. You don't have to use Toll House chips, you can use any that you find onsale and cob the recipe from the Nestle website.
Since it is for a fundraiser, you probably want to keep costs down. But you can add different kind of chips, using the toll house recipe as the base, such as reese's chips, heath, cinnamon, filled choc chips, mini M&Ms, white chips, andes mint chips, or choc chunks. You can also add a cup of peanut butter (this is not a substitution for anything) to each batch for a really chewy insanely good cookie.
If you make them fancier, you may not have that broad appeal that just a plain choc chip cookie will have. But you also may be able to charge more.
Another alternative, relatively cheap cookie to make is oatmeal cookies. You could add raisins, cinnamon chips, or choc chips.

Neiman Marcus Chocolate Chip Cookies:
Ingredients
1/2 cup unsalted butter, softened
1 cup brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons instant espresso coffee powder
1 1/2 cups semisweet chocolate chips
Method
1. Preheat the oven to 300°F (150°C).
2. Place the butter, brown sugar, and granulated sugar in the work bowl of an electric mixer fitted with a paddle attachment. Beat on medium speed for about 30 seconds, until the mixture is fluffy. Beat in the egg and vanilla for 30 seconds longer, until well combined.
3. In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Add to the mixer, while beating on slow speed. Beat for about 15 seconds, stir in the chocolate chips and espresso powder, and mix for 15 seconds longer.
4. Prepare a cookie sheet with about 2 tablespoons of shortening (or use a non-stick spray). Using a 1-ounce scoop, or using a 2 tablespoon measure, drop the cookie dough onto the cookie sheet in dollops about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into 2-inch circles; there should be room on the sheet for six or eight cookies at a time. Transfer to the oven in batches and bake for about 20 minutes or until the cookies are nicely browned around the edges. Bake for a little longer for crisper cookies.

COOKIES IN A JIFFY
1 pkg. (9 oz. size) yellow cake mix
2/3 cup quick-cooking oats
1/2 cup melted butter
1 egg
1/2 cup butterscotch chips (or any kind you like, try M & M's too)
In a mixing bowl, beat the first 4 ingredients. Stir in the butterscotch chips or M & M's. Drop by tablespoonfuls 2 inches apart onto ungreased baking sheet. Bake at 375 degrees for 10 to 12 minutes or until lightly browned. Remove to wire racks to cool. Makes 2 to 3 dozen cookies.
Note: I've tried this with butterscotch chips, raspberry chips, chocolate & peanut butter chips and have occasionally added pecans.

DIRECTIONS

* 1/2 cup shortening
* 1/2 cup peanut butter

* 1/2 cup light brown sugar, packed
* 1/2 teaspoon vanilla
* 1 egg
PREPARATION:
Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets.
Peanut butter cookies
Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough.
Bake peanut butter cookies at 375° for about 10 to 12 minutes.

3. Bake in preheated oven until golden brown, 8 to 10 minutes.
