Cheesy Hash Browns
1 32 oz pkg hfrozen hash browns, i 16 oz container sour cream, 2 cans cream of mushroom soup (undiluted), and 2-3 cups shredded cheddar cheese.
Mix all together, and pour into a greased baking dish. Bake at 400 for about 40 minutes. Add more cheese on top & return to oven til melted if desired.
This works well in a crockpot, too...but switch it on at least 4 hours before dinner time.

INGREDIENTS
1/2 cup chopped fresh mushrooms
3 tablespoons finely chopped onion
2 garlic cloves, minced
4 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/4 cups milk
3/4 cup mayonnaise
4 cups cubed cooked chicken
3 cups cooked long grain rice
1 cup chopped celery
1 cup frozen peas, thawed
1 jar (2 ounces) diced pimientos, drained
2 teaspoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup coarsely crushed cornflakes

DIRECTIONS
In a saucepan over medium heat, saute mushrooms, onion and garlic in 3 tablespoons butter until tender. Stir in flour until thoroughly combined. Gradually add milk; bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in mayonnaise until smooth.
Add chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper; mix well. Spoon into an ungreased 13-in. x 9-in. x 2-in. baking dish. Melt remaining butter; toss with cornflakes. Sprinkle over casserole. Bake, uncovered, at 350° for 30-35 minutes or until bubbly. Yield: 8-10 servings.

Alright i would bring chicken. Basicaly go to your local grocery store and buy however muchof boneless skinless chicken breast you think you will need depending on the amount of people going to the potluck (alot im guessing!!) . make some plain chicken breast by just adding a little lemon pepper. Than put chicken pieces in foil and grill it. only flip once. than make sauces for everyone to dip them in or pour ontop of the chicken. i like to make a advocado sauce buy dicing advocado, tomatoes, and onion. than add some olive oil lemon zest and a little lemon juice, and cilantro. Than for dip number too do the same but dont add any advocado and add some green peppers and/or hot sauce. than for just something plain i like to bring some smokey barbecue sauce and ketchup. bring all sauces in bowls and have a big spoon and mini plastiv cups or bowls so everyone can get their favorite sauce and dip and eat! hope you have a great time!

Thats easy, Baked Beans, 1 big can, you will need, cut up or dice up 1 tomato, 1 onion, dice up really good, and 1 pack of hotdogs, dice up 1 pack of hotdogs, 1 tablesspoon of
B.B.qu, Sauce, salt and pepper to taste, now put all in a cassorole dish, and bake for 30 minutes, Use your crock pot, that helps, and add cheese on top, until melted,

Fresh veggie trays is a good idea. Or buy potato salad by the quart and put it in your own dish. *g*
If you want to cook mac and cheese casserole is always a hit. Macaroni, some cheese sauce, (like spaghetti sauce only cheese) some grated cheese, stir, bake until a little brown around the edges and middle bubbling.

I go to lots of potlucks and ususally take deviled eggs or baked beans.
If you don't want to cook stop by KFC and get some cole slaw or a bucket of chicken or to a deli and get some broccoli salad or potato salad.

Cheesy looking casseroles are always a hit. How about a chili/taco one?
brown ground beef with taco seasoning, add can toma sauce and put in bottom of casserole, cover with fritos (any tortilla chip) crumbled and chedder cheese, bake til bubbly and garnish with tomato/onion/pepper diced and sour cream blobs.

2 tb Peanut oil
Salt -- to taste

1 c Barbeque sauce
Watermelon Pico de Gallo

Preheat grill. Make sure grates are clean and lightly
rubbed with oil. Brush chicken breasts with 2
tablespoons peanut oil and season with salt and
pepper. Place on grill and cook for 5 minutes, basting
with prepared barbeque sauce. Turn over, baste with
barbeque sauce, and cook for about 5 minutes more or
until juices run clear.

make a vegetarian chili. It's really easy... you just need a bell pepper, chopped up, a can of chickpeas, a can of kidney beans, 2 cans of tomatoes (I like the Hunt's tomatoes with sweet onions), a small can of tomato sauce, and a regular onion, chopped up. It will cook up within 3-4 hours.
