The east coast of Australia is about 4000km long. Sydney is on the east coast. There are daily trains north from Sydney to Brisbane and from Brisbane to Cairns. You can also get a train south to Wollongong and, I think, Nowra. There are specialist train trips organised to places like the Hunter Valley for things like jazz festivals in wineries but otherwise no organised tours I can think of. If you want an organised tour, just about all of them use buses, not trains.

I don't know if the Sydney/Tasmania ferry is still operating, I have an idea it isn't. The major ferry service is from Melbourne to Devonport. There are no regular shipping services for passengers to the west coast of Australia. If you want to get there from Sydney, fly or take the bus or train. The train is a great experience, it takes about three days.
