I often see the Food Network chefs topping their steaks with bleu cheese or gorgonzola sauce...I don't either, but I like the idea. What other cheeses would someone recommend? Does feta work?

Feta is alright but depending on how you make the steak a nice brie would be good. Or any crumbly or smooth cheese is good.

The thing is, you need a firm crumbly cheese, like blue cheese or Roquefort, or Gorgonzola, etc. Parmesan would be okay I think, and goat's cheese, because you would use a small amount due to the strong taste. I would not go for anything like cheddar, or mozzarella, it would ruin the taste of the steak.

If you have a good steak don't put cheese on it! Keep it really simple and just enjoy the taste of the meat.
Chefs have to do more complicated things - it's their job - but simple, with good ingredients is always the best.

Feta is too salty - if your not a "bluey" how about trying :

Emmental.

Gruyere`.

Spanish Manchego.

I've heard that feta is perfectly fine. So is provolone, but maybe that's just me.

Use blue vein cheese, nice bite to it, Plus a nice cockburns port to enjoy full flavour of meat (use to cook, not guzzle)
