Once you've cooked the meal from the frozen mince, you can freeze the cooked meal.
When you defrost it, it's best to not refreeze any uneaten portions and it's always better to defrost food overnight in the fridge and not on the benchtop.

Will be ok, the cooking of the mince before re-freezing takes care of that.

You cant refreeze meat if you haven't cooked it, but you CAN freeze it after it has been cooked - this is because the cooking process will have killed off all the bacteria in it, so it's safe to freeze it again.

You can definitely freeze your dishes once they're cooked. Another idea would be to make a nice meat loaf for Sunday lunch... if you cook it today, let it cool down and then put it in a shallow serving dish, cling film on top, in the fridge.

You can freeze both, however make sure that they have gone cold first. Just a note, I don't think bolognese would taste very good unfrozen. Its best eaten fresh or the next day.Hope this helps! Have a good one!

As long as the mince has been cooked once, it's fine to refreeze. If it's raw, do not refreeze.

Yes.
You can freeze cooked meat that has previously been frozen when it was raw.
