too much flour and over kneeding causes the dough to become hard and heavy. add flour in small amounts little by little. a properly kneeded dough with enough flour shouldnt be sticky and should be smooth and elastic.

You could try making your own pizzas that are healthier than the fatty ones they sell at pizza places and grocery stores. I have some good recipes if you want them :) Also, try switching the ice cream for frozen yogurt. It is a slightly healthier alternative. I don't have any experience with autistic children, but it seems reasonable...

i find that a healthy dose of olive oil in the mixture will help. and dont over-knead the dough.

definatly over kneading,i always add a good slug of extra virgin olive oil to the dough,then knead it in.you get a chewy,springy crust.
