Antique books are not something I traditionally associate with weddings, but I love them and find them extremely beautiful.
Whether or not this would work would depend a lot on the wedding theme, time of year, location, and couple. I could see this being a lovely decoration for a fall or winter indoor wedding -- especially some place with deep, rich colors. It might be nice to have the book titles fit in with some sort of love theme, although I don't know how many you need and how easy they would be to find. Are you planning to buy new books or scout around at used bookstores and library sales? New hardcover books are quite expensive.
Do books have any significance in your relationship? Did you meet in grad school or at a books signing? Is one of you a librarian, author, reading specialist, or (even certified bookworm)? Do you like to read together? If so, I think the book centerpieces would be especially fitting.

I think it is uniquely beautiful. Instead of looking for books in your wedding colors maybe do an assortment of different colors. You could stack two or three books then place a small short vase with flowers on top of that. (fishbowl style). I like your idea overall. It's different.
Edit: Maybe you could also do bookmarkers with your names for favors?

Its not weird, but it sounds dull. A centerpiece should have some life to it. Like flowers, candles. Maybe if you stacked the books and displayed candles or something along with it...

It's very unique. Are you working with a particular theme or look? That would be the test if it really works with the rest of your decor. Maybe soften the look with a few flowers or flower petals.

I'm all for being clever and doing some different, but not for destroying books to do so. I think it would be neat as long as the book are kept in tact.
