Also known as aji-no-moto. That is available in Asian markets. MSG (monosodium glutamate) has taken some big hits in the health food department, but it certainly is not the death some people make it out to be. Make your recipe the way it is, and if it is good and you remake it, try it then without the MSG. Then you KNOW. The problem with messing with a recipe the first time you make it is that you never know for sure how it is best changed. MSG will not kill you.

Leave the MSG out. It's a flavour enhancer that makes many people either feel sick or very thirsty. It's really not necessary to any recipe.

It's monosodium glutamate, a flavor enhancer. It's sold in the grocery store on the spice isle, most commmon trade name Accent.
It has been associated with health risks-some people are very sensitive to it. I think I'd try the recipe without it.
