are you in a hurry or not? if you're not in a hurry just put it in the fridge and wait. if you're in a hurry, there are many options -- run some warm water over it (i keep it inside of some kind of cover when i do that, like saran wrap or a plastic bag), stick it in the microwave and use the defrost option (it will start to actually cook at some point), or simply put it in a pan and start to cook it!

Anything that you do with ground beef, etc. would work well with turkey. I like meatballs, meatloaf and even burgers made from ground turkey. It is great in casseroles. FYI - I just found out that ground turkey is not necessarily lower in fat that beef. I assumed turkey was always low fat. Not so. Read labels. Some ground turkey is higher in fat than ground sirloin! That was a shocker for me when my husband was put on a short term NO fat diet. I found that Jewel ground turkey was .5% far compared to Jennie O which looked more like ground beef and had more fat than ground sirloin! If using the lower fat version be aware that the meat is also a little drier so you may need to add a little more liquid to your recipe.
