I recently read the back of a frozen fish package and noticed it was preserved with carbon monoxide gas. While researching it on the web I learned that a lot of meats sold in the U.S. go through this process. What I couldn't find is any information on its health risks. Any info would be great.

Carbon monoxide poisoning occurs when people are exposed to the actual gas. So your not in trouble.

It can mask signs of spoilage-the meat may look fresh but be poor quality or even contaminated.

no risk at all, its just to keep oxygen away from the meat, to prevent spoilage. it cant hurt you at all.
