This is a recipe that evolved over time when I owned a cafe in Queensland Australia. You are the first to have been given it. The ingredients given are for about 6 servings.
Tropical Chicken Salad
Mix together 300 grams of Rocket, 2 big double-handfuls of shredded chicken, 150 grams of walnuts broken apart or roughly chopped, 250 grams of seedless grapes (green or red) OR chopped fresh mango, 1 cup roughly cut fresh basil leaves.
Mix together with dressing of about 2/3 cup mayonnaise, 2/3 cup sour cream, 1/2 cup “Palms” Mango & Paw-Paw Chutney, and 2 teaspoons curry powder.
Hope you like it.

Gazpacho is awesome when it gets really hot out. Use thinly sliced green onion tops instead of regular onion if you're not an onion keener. Pasta and veggies is ridiculously easy. I've been experimenting with it as a way to boost the veggies and reduce the pasta I consume. And who needs a recipe? Use any pasta you have handy, use any combo of veggies you feel ambitious enough to try. Carrots, onions, celery, peppers, peas, green beans, broccoli, spinach and sundried tomato all work fabulous. Stir fry some of the harder veggies and onions in a little bit of EVOO and lots of garlic. Add the softer stuff like peas, spinach and broccoli towards the end. Mix a small quantity of pasta in with all of it Garnish with a lil grilled chicken if you so desire and some parmesan cheese. I've been fooling around with some asian themed cooking as well... ginger pork is SO ridiculously easy and quick to make, just grate a bunch of fresh ginger into a bowl with some soy sauce, use that to marinate strips of pork (you CAN use tenderloin but I find that the cubed pork leg works just fine too, just cut it a bit smaller). Marinate all your pork for 10-20m, then quick fry it. You can either serve it as is with white rice and steamed veggies or make stir fry with it.

hm mm. . . lets see, I don't want to say salad cause that's what pretty much everyone is thinking! So. . . let's see. . . if you don't mind a bit of cooking, you can make all sorts of things!! How about some salmon with lemon and onion with asparagus on the side? It's really quick, it takes less time than it sounds. and it's really delicious and easy!
2 salmon fillets (5-6 oz each)
1 small onion
1 large lemon halved and sliced thin
2 pieces of aluminum foil (big enough to wrap around salmon and extra stuff)
1 bunch of asparagus
asparagus sauce:
(1 tablespoon of butter
splash of hot sauce
the following add to taste: lemon and pepper seasoning, lemon or lime juice, and grated Parmesan cheese)
Preheat oven to 325 degrees F.
Place onions on foil, place salmon on top, lay lemon slices on top of each fillet. Sprinkle all lightly with sage and salt and pepper. wrap and cook until salmon flakes easily with a fork.
while salmon is cooking, boil or steam asparagus until slightly crispy and drain. while it's still hot, place in serving dish and add the following items on top of the asparagus. gently stir and serve when salmon dish is done.

Grilled shrimp skewers with bell pepper and onions. Marinate the shrimp with olive oil, cilantro, garlic, pepper and green onions a little lime juice for about an hour. Then skewer them up with generous slices of pepper and onions and grill them for 3 minutes a side.
The beauty is that the cold shrimp leftovers make a great next-day snack by the pool.
