It depends on the fruit. Certainly you can bake bananas and apples, probably pears as well. I'm not sure how some others would do.

Oh, yeah you can. Yummy. Roasting fruit softens it and concentrates the fruit's sweetness. It carmelizes the sugar in the fruit and makes it even more delicious.
It works best with stone fruits (apricots, plums, nectarines, or peaches), pineapple, pears, and other big fruits.

To make the roasted fruit, halve (and pit the stone fruits). You can leave them in halves or cut them into quarters. Place the fruit on a roasting pan.
Melt butter (2 tablespoons per pound of fruit) in a small saucepan. Halve a vanilla bean and scrape out the seeds. Add the seeds and the vanilla bean pod to the warm butter. Using a pastry brush, brush the melted vanilla butter over the fruits. Sprinkle the fruits with the sugar (to taste, depending upon the sweetness of the fruit) and then with a little water. Roast the fruit at 350 degrees for 20-30 minutes until just soft. While the fruit is roasting, baste it with the pan juices to glaze the fruit.

What exactly do you mean by "roast"? In the oven or on a grill? You can bake quite a few fruits: you just have to watch how long because most fruit tends to scorch due to the high sugar content and fruit skins tend to get dry and tough when baked. You can add chunks of pineapple to shishkebab skewers on the grill or put it on pizza. There are many recipes which add dried fruits like apricots or prunes or fresh orange or lemon slices to sauces for roasting meats. And, of course, you can bake apples or pears for deserts. Apples and raisins are often added to stuffing for turkey and chicken. High water content, pulpy fruits like melon or grapes don't hold up to heat.

Most fruits roast try drizzling with a little honey.
Another alternative to use up all your fruit is to slice it up, pour on a can of peaches then top with a soft scone mix and bake for 20 min. Tastes delicious.

Yes but it would be better to roast, peaches, pears especially, apples, banana's with oil on top, and other hard fruits like that.

Yes you can. In particular apples, pears, peaches whole or chopped with a little butter and sugar. Then of course you can experiment with pastry and alcohol and creams.
