Tomorrow evening I'm serving a starter of spicy prawns - I want to do some sort of salad to go with it, nothing complicated but not just boring lettuce leaves. Any ideas?

Cepes are porcini mushrooms. They are occasionally available fresh, but usually dried. If they're dried they have to be rehydrated by being soaked in a hot liquid, such as water or wine. Their flavor is intense and earthy. Really delicious.

With spicy prawns I'd serve a delicate salad of butter lettuce, scallions, avocado, and maybe tomatoes, in a vinaigrette.

Salad To Go With Prawns

King prawn brochette on a spicy sweet salad



Serves 2



Preparation time 1-2 hours

Cooking time less than 10 mins






Ingredients
20 raw king prawns, heads removed and shelled - butterfly them to
remove waste
wooden skewers (soaked to stop them burning when barbequed or griddled)
For the marinade:
1 red chilli
1 thumb-sized piece of ginger , peeled
1 garlic clove
a little lime juice
1 tsp vegetable oil
For the salad:
½ fresh pineapple, cut into 1cm/½in dice
110g/4oz mooli (daikon radish), cut into fine batons (julienne) 7.5cm/3in long
200g/7oz mangetout, cut on an angle finely
2 carrots, cut into fine batons (julienne) 7.5cm/3in long
1 red onion, finely sliced
1 heaped tbsp coriander, coarsely chopped
2 red chillies, finely diced
½ thumb-sized piece of ginger, finely diced
For the salad dressing:
110ml/4fl oz rice wine vinegar
2 limes, zest and juice
2 tbsp caster sugar



Method
1. In a pestle and mortar pound the marinade ingredients (the chilli, ginger, garlic, lime juice and oil) and add the prawns, allowing them to marinate for 1 hour.
2. Once the prawns have marinated, skewer them on to the wooden skewers - about four per skewer depending on the size of the prawns.
3. On a hot griddle pan place the prawn skewers and cook for a couple of minutes on each side (the prawns will turn pink).
4. Meanwhile prepare the salad ingredients and mix the dressing in well - almost bruising the vegetables.
5. Serve the salad in the middle of a plate and place two skewers on top and eat immediately.

Sliced roasted ceps, spinach leaves and a mild mustard dressing.

Ceps are a woodland fungus similar to a mushroom but much more delicate. They are in season for another couple of weeks, and can be got from all good grocers. I have this dish on my current menu although I use fresh langoustine tails , but your spicy prawns will complement the other ingredients well.

Throw some papaya chunks (skin removed) into a blender. Puree with some light-flavored cooking oil (corn, canola, rapeseed) and a splash of white balsamic vinegar - blend until creamy. Serve as a dressing over simple greens, garish with diced roma tomatoes and fresh-ground pepper.

Simple, and the sweet will offset the spicy.

I like this one... watermelon, king prawns, red onion (thinly sliced), coriander leaves, chopped toasted hazlenuts.
Dressing...(clove of garlic (peeled & crushed), 1 large chopped chilli, 1 tsp grated ginger, 3 tbsp fish sauce, lime juice and 2 tbsp demerara sugar). Yum.

or you could try prawns with avacado, mango, ice berg lettuce leaves, some watercress. and maybe some pecan nuts. Then just add 2 tbsn lemon juice/cider vinegar, oil and season.

In that case keep in simple darling as in boring lettuce. That's how food works

YES! Mediterranean salad:

Cherry tomatoes
cubes of goat cheese
Some lettage
a little Corn just to add color
and drizzle some olive oil and oregons....hmmmmm

creek salad,,, cut toms in to 4 take skin off cucumber and cut in big chunks shread iceburg lettuce goat cheese anything else u want to put in , mix in a large bowl, pour on lots of olive oi,,, trust me u cant taste it,,,, its lovely honest
